Today I made Banana Peppermint Cake!
2 very ripe bananas, 1/3C butter, 1C flour, 1/2C sugar, 1t peppermint extract, 1/4t baking powder, 1/4t baking soda, 2 eggs
Preheat oven to 325 F.
Add remaining in ingredients in order listed above. Mix well.
Pour into greased loaf pan.
Bake 45-50 minutes or until well browned and set in center.
Today I made Chocolate Honey Cookies!
1C butter, 3/4C cocoa powder, 2 1/4 C sugar, 1t baking soda, 2 eggs, 1/2t salt, 2C flour, 1 oz unsweetened chocolate, melted, 1/4C honey
Preheat oven to 350F.
Cream butter with sugar. Add eggs. Blend well.
Stir in melted chocolate.
In separate bowl, mix dry ingredients.
Pour into creamed mixture alternately with honey. Blend well.
Drop by teaspons onto greased cookie sheets.
Bake 10 minutes or until edges of cookies pull away from cookie sheet. Do not burn. Change the lighting before serving.
Today I made Chocolate Sheet Cake!
1/2C butter, 3 oz cream cheese, 1/4C cocoa, 1T instant coffee powder, 1C water, 2C flour, 1 1/2C firmly packed brown sugar, 1t baking soda, 1T cinnamon, 1/2t salt, 14 oz sweetened condensed milk, 2 eggs, 3C powdered sugar
Preheat oven to 350F.
Melt butter and cream cheese. Add cocoa and coffee, then water. Stir well. Bring to boil. Remove from heat. In bowl, mix dry ingredients except for powdered sugar. Add cocoa mixture. Blend well. Stir in 1/3C condensed milk, and eggs. Blend well.
Pour onto greased jelly roll pan.
Bake 15 minutes or until cake springs back when lightly touched.
Stir together remaining condensed milk and powdered sugar.
Spread on warm cake. Add sprinkles or other decorations. Cake can be cut, layered and decorated to resemble various things (a train, car, boat, house, etc.) for a child’s birthday party, or simply stacked like pancakes.
Today I made Fruit Crumble!
2C flour, 2C powdered sugar, 1/2C peanuts (optional), 1C butter, 20 oz fruit preserves– strawberry, cherry, raspberry, etc.
Preheat oven to 375F.
Cream butter with dry ingredients and peanuts until crumbly. Press enough mixture to coat bottom of greased baking dish, 1/4″ deep. Spread desired flavor(s) of preserves on top.
Press remaining crumbs lightly on top 1/4″ thick.
Bake 40-45 minutes or until lightly browned. Cool completely.
