Today I made Whole Wheat Sponge Cake With Chocolate Frosting!
6 eggs, separated, 1 1/4C brown sugar, 1/2C water, 1/2t vanilla or vanilla powder, 1/2t lemon extract, 1/4t orange flower water, 1 1/2C whole wheat flour, sifted, 1/2t salt, 1t cream of tartar
Prehat oven to 350F.
Beat with electric mixer yolks, sugar, water and flavorings about 7 minutes, until very thick and creamy. Sift in flour and salt gradually, folding in. In separate bowl, beat egg whites until stiff but not dry. Fold into yolk mixture. Bake in ungreased tube pan 60-70 minutes or until lightly browned. Invert the pan to cool completely.
1/2C chocolate chips, 1/4C water, 1 3/4 to 2C powdered sugar
Melt chips. Stir in water. Stir in sugar until desired consistency. Spread on cake.
Today I made Gingerbread!
1C molasses, 1C boiling water, 1C sugar, 3C flour, 8T butter, melted, 2t baking powder, 2t baking soda, 2t ginger, 1/2t salt, 2t cinnamon
Preheat oven to 325F. Add boiling water to molasses. Sift together dry ingredients. Stir into molasses. Add melted butter and beat well. Pour into jelly roll pan. Bake 25-35 minutes or until toothpick comes out clean.
Today I made Coffee Fruitcake!
1lb citron or other dried or candied fruit, such as cranberries, pineapple, raisins, or cherries; 1C brewed black coffee, 2C self-rising flour, 14oz sweetened condensed milk, 12oz chocolate chunks
Preheat oven to 375F.
Soak fruit in coffee for two hours or more.
Stir in milk. Blend well.
Add flour. Blend well. Stir in chocolate. Blend well.
Bake in two greased loaf pans for 55-60 minutes, or until toothpick comes out clean. Do not burn.
Today I made Oatmeal Surprise Cookies!
1C butter, 1C sugar, 1C brown sugar, 2 eggs, 2C flour, 2C instant oatmeal, 1/2t salt, 1t baking powder, 1t baking soda, 2C mini-Kisses [extra-large chocolate chips] or chocolate chunks, 4 oz bittersweet chocolate, grated
Preheat oven to 375F.
Cream butter and sugars. Add eggs. Blend well.
In separate bowl, sift flour, powder, soda and salt.
Add to butter mixture. Blend well.
Grate the bittersweet chocolate to desired size. If you use a microplane, you will get powder. Stir into mixture, with mini-Kisses. Roll into balls and place 2″ apart on greased cookie sheets. Bake 10-12 minutes.
