Mocha Cinnamon Brownies

Today I made Mocha Cinnamon Brownies!

1 1/4C brown sugar, 1C butter, 2t instant coffee powder, 1/4C hot water, 3 eggs, room temperature, 2/3C flour, 2/3C unsweetened cocoa powder, 1/2t baking powder, 1/4t salt, 2t cinnamon

Preheat oven to 350F.

Heat water. Add coffee powder. Mix in brown sugar and butter until smooth. Stir in eggs until just blended.

In bowl, mix dry ingredients, and gradually sift into egg mixture. Spread evenly into greased 13″X 9″ pan. Bake 20-25 minutes or until toothpick comes out clean. Cool completely. Cut into squares. Or trapezoids.

Sa Chi Ma

Today I made Sa Chi Ma (fried dough)!

1 3/4 cup flour, 2 teaspoons baking powder, 3 eggs, 1C sugar, 6 1/4oz honey, 1C water, oil for deep-frying

Sift dry ingredents except for sugar. Make a well and add eggs in the center. Blend well. Knead the dough thoroughly until smooth.

Roll into a big pancake, about 1/2″ thick. Cut into strips 2″ long.

Dust with flour. Deep fry the strips until golden, about 45 seconds. Remove and drain. Boil sugar, honey and water over high heat. Simmer, stirring constantly, until syrupy.

Add dough strips and blend syrup-until coated.

Turn onto greased cookie sheet to cool.

Chocolatey Chocolate Cookies

Today I made Chocolatey Chocolate Cookies!

2C choc chips, 4T butter, 1/3C cocoa, 2 eggs, 1t vanilla, 3/4C sugar, 1/4C flour, 1/4t baking powder

Preheat oven to 350F.

Melt only 1 CUP of chips and butter. Stir until smooth.

Stir in sugar. Blend well. Cool 20 minutes.

Stir in eggs. Blend well.

Stir in vanilla and then dry ingredients. Blend well

Stir in remaining chips.

Drop by Tbs 2″ apart on foil-lined cookie sheets.

Bake 10-12 minutes or until tops are a little cracked. Do not overbake, or cookies will be crunchy and not fudgy. Let cool 10 minutes before removing from sheets.
