Surprise Muffins

Today we made Surprise Muffins!

1 1/2C honey, 1/2C oil, 4C flour, 2t baking powder, 2 eggs, 1/2C cornmeal, 1 1/2C milk or 1 1/2C juice(s), 1T orange zest (optional)

Possible Fillings: mini chocolate chips, butterscotch chips, fruit spread

Cinnamon Filling: 6oz coarsely chopped pecans, 1/4C sugar, 1/8C cinnamon

Preheat oven to 350F.

Mix dry ingredients thoroughly. In separate bowl, mix wet ingredients thoroughly.

Make a well in the dry and mix in wet ingredients until just blended. Spoon 1t batter into each muffin tin cup. Mix filling(s). Spoon 2t filling onto batter in cups.

Spoon on remaining batter. Bake 20-25 minutes or until lightly browned.

Plain Cookie Bars

Today I made Plain Cookie Bars!

1C sugar, 1C brown sugar, 2C flour, 1C oats, 1t baking soda, 1t baking powder, 1t salt, 1C oil, 3 eggs

Preheat oven to 350F.

Mix oil with sugars. Add eggs.

In separate bowl, mix dry ingredients. Slowly blend dry into wet.

Spread into greased and floured jelly roll pan or other large sheet pan. Bake 15 minutes or until toothpick comes out clean. Cool and cut into bars.

Butterscotch Cookie Bars

Today I made Butterscotch Cookie Bars!

3 1/2oz butter, 3T sugar, 2oz cornmeal, 3oz flour, 4 1/2oz butter, 3oz brown sugar, 2T honey, 14oz sweetened condensed milk

Preheat oven to 350 F. To make the crust, cream butter and sugar until light and fluffy. Add cornmeal and flour. Knead briefly on lightly floured surface. Press crust into greased rectangular pan, any size. Bake 15-25 minutes or until very lightly browned. Cook butter, brown sugar and honey in saucepan over medium heat stirring constantly until boiling. Simmer 7 minutes. Add milk. Mix well. Pour over baked crust. Bake 15-25 minutes longer, or until set. Cool completely. Cut into bars.

Rum Cornmeal Chip Cookies

Today I made Rum Cornmeal Chip Cookies!

1C butter, 3/4C brown sugar, 1t rum, 1 1/2C flour, 3/4C fine yellow cornmeal, 1t ground ginger, 1t ground nutmeg, 1/4t black pepper, 1 3/4C chocolate chips< Preheat oven to 350. Cream butter and sugar until fluffly. Stir in rum. In separate bowl, mix dry ingredients. Stir into butter mixture until just blended. Stir in chips. Drop by teaspoons onto ungreased cookie sheets. Flatten each cookie. Bake 12-14 minutes or until lightly browned. Cool completely on racks.

Chocolate Cream Cheese Cookies

Today I made Chocolate Cream Cheese Cookies!

4T butter, 1/4C fat free cream cheese, 1/3C sugar, 1/2C brown sugar, 1C flour, 1/2C cocoa, 1/4t salt

Preheat oven to 350F.

Cream together butter, cream cheese and sugars.

In separate bowl, sift dry ingredients.

Blend into butter mixture. Roll dough into balls and flatten with a drinking glass.

Bake 8 minutes or until slightly puffed and soft to touch. Cool on racks.
