Today I made Rum Cornmeal Chip Cookies!
1C butter, 3/4C brown sugar, 1t rum, 1 1/2C flour, 3/4C fine yellow cornmeal, 1t ground ginger, 1t ground nutmeg, 1/4t black pepper, 1 3/4C chocolate chips< Preheat oven to 350. Cream butter and sugar until fluffly. Stir in rum. In separate bowl, mix dry ingredients. Stir into butter mixture until just blended. Stir in chips. Drop by teaspoons onto ungreased cookie sheets. Flatten each cookie. Bake 12-14 minutes or until lightly browned. Cool completely on racks.
