Today we made Surprise Muffins!
1 1/2C honey, 1/2C oil, 4C flour, 2t baking powder, 2 eggs, 1/2C cornmeal, 1 1/2C milk or 1 1/2C juice(s), 1T orange zest (optional)
Possible Fillings: mini chocolate chips, butterscotch chips, fruit spread
Cinnamon Filling: 6oz coarsely chopped pecans, 1/4C sugar, 1/8C cinnamon
Preheat oven to 350F.
Mix dry ingredients thoroughly. In separate bowl, mix wet ingredients thoroughly.
Make a well in the dry and mix in wet ingredients until just blended. Spoon 1t batter into each muffin tin cup. Mix filling(s). Spoon 2t filling onto batter in cups.
Spoon on remaining batter. Bake 20-25 minutes or until lightly browned.
