Chocolate PB Oatmeal Drops

Today I made Chocolate PB Oatmeal Drops!2C sugar, 1/2C butter, 1/2C milk, 1/3C cocoa, 2/3C crunchy peanut butter, 3C quick oats

Mix sugar, butter, milk and cocoa in medium saucepan. Cook, stirring constantly until well blended and boiling.

Stir in peanut butter, oats until well blended. Boil two minutes.

Quickly drop mixture by heaping teaspoons onto foil. Cool completely.

Coconut Nut Bars

Today I made Coconut Nut Bars!

1/2C butter, melted, 2C vanilla wafer crumbs, 1C mini chocolate chips or 1/2C chocolate chips (optional), 1C coarsely chopped pecans and/or almonds, 1C coconut, 14oz sweetened condensed milk

Preheat oven to 350F.

Melt butter and pour into baking dish.

Add ingredients in order listed.

Do not stir. Bake 30 minutes or until set. Cool before cutting.

Iced Oatmeal Bars

Today I made Iced Oatmeal Bars!

6C oats, 4/3C whole wheat flour, 1t baking soda, 1t salt, 2t cinnamon, 2/3C honey, 2/3C veg oil, 2 eggs, 6T orange juice

Icing: 1T fruit preserves, 1 1/2- 1 3/4C powdered sugar

Preheat oven to 350F.

Mix dry ingredients thoroughly. In separate bowl, whisk wet ingredients thoroughly.

Make a well in the dry ingredients and mix in the wet. Blend thoroughly. Press into greased jelly roll pan. Bake 12-15 minutes or until lightly browned. Cool. Slice into squares or rectangles. Or circles. Mix icing until spreadable. Spread on bars. Chill 10 minutes. Eat.

Banana Bread

Today we made Banana Bread!

1 3/4C pre-sifted flour, 2t baking powder, 1/4t soda, 1/2t salt, 1/3C butter, 2/3C sugar, 2 eggs, well beaten, 1C mashed, ripe bananas

Preheat oven to 350F. Cream butter. Beat in sugar gradually, until light and fluffy. Add eggs and beat well. Sift together dry ingredients. Add dry ingredients alternately with bananas, gradually, beating after each addition. Turn into a well-greased loaf pan. Bake 60 to 70 minutes or until lightly browned.
