Today I made Cheesecake!
12oz cream cheese (fat-free if desired), 3 eggs, 3/4C sugar, 1C granola
Preheat oven to 350F.
Blend cream cheese and sugar well.
Add eggs. Blend well. Butter the bottom and sides of a rectangular or square baking dish. Thinly coat the bottom with granola. Pour in batter. Bake 25-30 minutes or until lightly browned and set. Cool before cutting.
Today I made Butterscotch Pudding!
3T cornstarch, 1 1/4C brown sugar, 2C milk, 1 egg, 1/3C butter
Mix cornstarch and brown sugar in heavy saucepan. Stir in milk.
Add egg. Beat well.
Cook over medium heat, stirring constantly until mixture thickens and bubbles, about 7 minutes. Reduce heat to low. Add butter.
Stir until smooth and of desired thickness.
Today I made Banana Raisin Muffins
1/2C sugar, 1/3C butter, 2eggs, 1C mashed ripe bananas, 3/4C honey, 1/4C milk, 1 3/4C flour, 1t baking powder, 1t baking soda, 1C oatmeal, 1C raisins
Preheat oven to 375. Cream sugar with butter until fluffy. Add remaining wet ingredients. Blend well. In separate bowl, stir together dry ingredients. Blend well. Make a well in the dry ingredients and stir in wet until just blended. Stir in raisins. Spoon into greased muffin tins. Bake 20 minutes or until browned.
Today I made Fluffy Coconut Cookies!
1/3C butter, 3oz cream cheese, 3/4C sugar, 1 egg yolk, 2t orange juice, 1 1/4C flour, 2t baking powder, 1/4t salt, 3C coconut, 1C coconut, sprinkles
Cream butter, cream cheese and sugar.
Add yolk and orange juice. Blend well. In separate bowl, mix dry ingredients and gradually add to wet.
Stir in 3 cups of coconut. Cover and chill for one hour. Preheat oven to 350F.
Shape dough into 1″ balls and roll in 1C coconut and/or sprinkles.
Bake on ungreased cookie sheets 10-12 minutes or until lightly browned.
