Wheat Chip Spice Cookies

Today I made Wheat Chip Spice Cookies!

1/4C plus 2T butter, 3/4C sugar, 1 egg, 3/4t vanilla, 2T milk,
1 1/2C whole wheat flour, 3/4t baking powder, 1/2t baking soda,
1/2t salt, 1/8t ground nutmeg, 1/2t ground cinnamon, 1C chocolate chips

Preheat oven to 350F. With electric mixer, beat butter and sugar until light and fluffy. Add egg, vanilla and milk. Mix until well blended. In separate bowl, combine dry ingredients. Gradually beat into wet ingredients, scraping the sides of the bowl. Blend welll. Stir in chocolate chips. Drop by rounded tsps onto greased cookie sheets. Bake 10-12 minutes or until lightly browned. Cool 5 minutes. Transfer to rack to cool completely.

Apple Pecan Coffeecake

Today we made Apple Pecan Coffeecake!

Cake: 2/3C flour, 1/2C whole wheat flour, 1t baking soda, 1t cinnamon, 1/4t salt, 1 1/2C peeled, cored and diced apple, 1 egg, 3/4C sugar, 1/4C chopped pecans, 1/4C applesauce

Topping: 1T flour, 1T whole wheat flour, 1/2t cinnamon, 1T butter, 1/4C chopped pecans, 1/4C brown sugar

Preheat oven to 350F.

Mix the first five ingredients.

In separate bowl, mix apple and egg.

Stir in 3/4C sugar and applesauce. Add pecans. Add flour mixture and stir until just combined. Spoon into greased tube pan.

Stir together flours, brown sugar and cinnamon. Cut in butter until crumbly. Mix in pecans. Sprinkle over batter in pan. Bake 30-35 minutes or until toothpick comes out clean. Cool in pan 10 minutes. Remove from pan and serve warm.

Honey Creme Brulee

Today we made Honey Creme Brulee!

7 egg yolks, 2 oz sugar, 2 oz honey, 1C heavy cream, 1C skim milk, 1t lavender extract, 4T sugar

Preheat oven to 350F. Boil cream, milk and extract. Turn off heat. In bowl, beat yolks, sugar and honey until smooth. Whisk boiled mixture into eggs. Strain through mesh sieve. Skim off any foam. Pour batter into ramekins set in a baking pan. Pour water into the pan until halfway up the sides of the ramekins. Bake 25-30 minutes or until set. Cool. Chill 3 or more hours. Sprinkle a thin layer of sugar on top. Caramelize with a small torch or under a broiler.
