Today I made Gingerbread!
2oz corn syrup, 8oz golden syrup, 1/2C butter, 2C flour, 1/2t salt, 1 1/2t baking soda, 2t ground ginger, 1/4t cinnamon, 1/4t nutmeg, 1/4t ground cloves, 1 egg, 1C milk, 1/4C brown sugar
Preheat oven to 350F. Stir butter and syrups over medium heat until butter is melted. Mix dry ingredients. Add syrup. Blend well. Add egg and milk. Blend well. Pour into greased 9″ square baking dish. Bake 50 minutes or until toothpick comes out clean. Cool 5 minutes. Remove from baking dish. Cool. Cut. Serve warm or room temperature.
Today I made Whole Wheat Chocolate Chip Cake!
1 1/2C sugar, 3/4C whole wheat flour, 1t salt, 1C water, 2 eggs, beaten, 1/2C butter, 1/4C cocoa, 1t vanilla extract, 1C flour, 2t baking soda, 1C butter, 1/2C sour cream, 1C chocolate chips
Preheat oven to 375F. Sift together sugar, the two flours, salt and baking soda. In saucepan, melt butter in cocoa and water, stirring until mixture boils. Remove from heat. Pour into dry ingredients. Blend well. Stir sour cream with beaten eggs. Add to chocolate mixture. Blend well. Stir in chocolate chips. Pour batter into 13″X9″ baking dish. Bake 30 minutes or until toothpick comes out clean. Cool in pan on rack.
Today I made Fruity Cheese Bars!
2C flour, sifted, 3/4 plus 1T firmly packed brown sugar, 14oz sweetened condensed milk, 2T cornstarch, 1 1/2C oats, 1C butter, 8oz fat-free cream cheese, 1/4C orange juice, 16oz whole cranberry sauce
Preheat oven to 350F.
Cream butter and 3/4C brown sugar. Blend in flour. Then blend in oats and press into greased 13″X9″ baking dish.
Bake 20 minutes or until lightly browned.
Stir the cream cheese until light and fluffy. Gradually add sweetened condensed milk. Blend until smooth.
Stir in orange juice. Blend well. Pour over crust. In separate bowl, mix 1T brown sugar and remaining ingredients. Spoon over cheese layer.
Bake 45 minutes or until crust is golden brown and center is set. Cool. Chill one hour before serving.
Today I made Molten Chocolate Hazelnut Pie!
filling: 1 1/2C corn syrup, 5oz unsweetened chocolate, 3T cocoa, 1T vegetable oil, 2C sugar, 4 eggs, 1 1/2t vanilla extract, 2 1/2C chopped hazelnuts, 1 pie shell
chocolate topping: 1oz unsweetened chocolate, 7oz sweetened condensed milk
Preheat oven to 350.
Prick pie shell with fork so it won’t explode in the oven.
Bake pie shell 15 minutes or until golden.
Melt chocolate with corn syrup in heavy saucepan. Blend well.
In bowl, beat eggs.
Add sugar and vanilla extract. Blend well. Add egg mixture to chocolate. Blend well. Add cocoa and vegetable oil. Blend well.
Stir in nuts.
Pour into baked pie shell. Bake 40-45 minutes or until set in the middle. Cool.
Melt chocolate. Add milk. Blend well. Pour on cooled pie. Chill one hour before serving.
