1/2C olive oil, 2 eggs, 1C + 3T sugar, 1/2C orange juice, 1 1/4C flour, 1/2C fine yellow cornmeal, 2t baking powder, 1t salt, finely grated zest of 1 orange, 1T ground ginger
Preheat oven to 350°F.
Whisk together oil, eggs, 1C sugar and orange juice until smooth.
Stir in zest.
In separate bowl, mix dry ingredients. Add dry ingredients to wet. Stir until just blended. Pour batter into 8″ round, parchment-lined cake pan greased with olive oil. Mix 3T sugar with ginger. Sprinkle on top of batter. Bake 35-40 minutes or until toothpick comes out clean. Cool in pan 20 minutes. Run a knife around edge of cake; invert cake gently onto a plate, and remove parchment paper. Re-invert cake onto a rack to cool completely.
Today I made Peanut Surprise Cookies!
1/2C butter, 3/4C brown sugar, 2T brown sugar, 1 egg, 1t vanilla, 1t cream of tartar, 1/2t soda, 1/8t salt, 1 1/3C flour, 6oz chocolate chunks, 1t cinnamon, 1/2C coarsely chopped peanuts
Preheat oven to 400F. Beat butter with 3/4C brown sugar.
Stir in egg and vanilla. Blend well.
In separate bowl, mix dry ingredients. Add to wet ingredients. Blend well. Stir in chocolate chunks and peanuts.
In separate container, mix 2T brown sugar with cinnamon.
Shape batter into balls and roll in sugar/cinnamon.
Place 2″ apart on parchment-paper lined cookie sheets or food-grade silicone-reinforced glass-weave mat.
Bake 8-10 minutes or until firm. Do not overbake. Cool on racks.
Today I made Mango Pineapple Cheesecake!
16 oz cream cheese, 10 oz sour cream, 10 oz sugar, pinch salt, 3 eggs, 3T mango-pineapple juice
Preheat oven to 350F.
Cream together cream cheese and sugar until light and fluffy.
Add salt and eggs. Stir in sour cream and juice. Blend well.
Pour into greased springform pan. Wrap the outside of the pan in foil in three layers, or place on top of a metal pan. Place springform pan inside of a larger heat-proof container. Pour water in the lower container to make a water bath. Bake 30-40 minutes or until browned on top. Cool. Chill 2 hours before serving.
Today I made Chocolate Apple Cake!
2 3/4C unsifted flour, 1 1/3C sugar, 2/3C cocoa, 1 1/2t baking soda, 1/2t baking powder, 1t cinnamon, 3 eggs, 1C oil, 2t raspberry blush vinegar plus milk to equal 1 cup, 2t vanilla, 2C chopped apple
Preheat oven to 350F.
Mix dry ingredients. In separate bowl, mix eggs, oil, vinegar, milk and vanilla until well blended. Gradually add dry ingredients. Blend well. Stir in apple, mixing evenly.
Pour into greased and floured 9″ or 10″ round cake pan.
Bake 60 minutes or until toothpick comes out clean. Cool 10 minutes. Remove from pan and eat.
