Today we made Raisin Cornmeal Cake!
This recipe is from the Sun Maid golden raisins box.
2/3C butter, 2 2/3C sifted powdered sugar, 2 eggs, 1t vanilla, 1C flour, 1/3C fine yellow cornmeal, 2/3C golden raisins
Preheat oven to 325F.
Cream butter and sugar. Beat in eggs and vanilla. In separate bowl, mix dry ingredients and raisins.
Stir dry ingredients into wet. Blend well. Spread batter in greased and floured loaf pan. Bake about one hour and fifteen minutes, or until well browned and toothpick comes out clean.
