Today I made Chocolate Chip Cheesecake!
1C coarse chocolate cookie crumbs, 1/2C plus 1/2T sugar, 1 1/2T butter, melted, 8oz fat-free cream cheese, 2 eggs, 1t vanilla, 3/4C mini chocolate chips
Preheat oven to 325F.
Mix cookie crumbs, sugar, and butter until blended. Press into the bottom of a greased 9″ springform pan. Cream sugar and cream cheese. Blend well. Beat in eggs. Blend well. Beat in vanilla. Blend well. Pour batter evenly onto crust.
Sprinkle chips on top. Bake 60-70 minutes or until toothpick comes out clean. Cool, then chill 2 hours before serving.
