Strawberry Cobbler

Today I made Strawberry Cobbler!

1 1/2 pints well-drained, hulled, sliced strawberries, 1/3C sugar, 1/4C butter, 1/3C flour, 1/3C brown sugar, 3/4C quick oats

Preheat oven to 350F.

Line a greased 9″X13″ baking dish with sliced strawberries. Set aside.

Cream butter with sugars. Mix in flour. Add oats. Sprinkle on strawberries.

Bake 30 minutes or until lightly browned. Serve hot.

Chocolate Marshmallow Cookies

Today I made Chocolate Marshmallow Cookies!

This recipe is from Mrs. Fields’ Cookie Book, page 75.

1C butter, 1C sugar, 1C brown sugar, 2 eggs, 1/2t salt, 3C flour, 2/3C cocoa, 1/2t baking soda, 2t vanilla extract, 2C mini chocolate chips, 8 oz mini marshmallows

Preheat oven to 400F. Keep the marshmallows frozen until you insert them in the dough. Mix flour, cocoa, salt and baking soda. Cream sugars with butter until fluffy. Add eggs. Blend well. Stir in vanilla. Add flour mixture. Blend well. Stir in chips.

Take a tablespoon of dough in hand, mash 4-5 marshmallows into it, and cover with more dough.

Place on ungreased baking sheets, 2″ apart. Bake 8-10 minutes. Cool 2 minutes, then transfer to racks to cool.
