I used butter instead of shortening.
Today I made Cheesecake Apple Pie!

I used a graham cracker pie shell instead of the Crust. I made 2/3 of the Filling recipe with fat-free cream cheese and 1/2C sugar, and used 3T lemon juice instead of 1T, spreading the cinnamon mixture over the sliced apples, and again over a second layer (1 1/2 apples, total).
Today I made Pineapple Marshmallow Fudge!
I used mini-marshmallows, and omitted the walnuts, white chocolate and cherries.
Today I made Blueberry Sour Cream Bars!
Crust: 1/2C flour, 1/4t baking powder, 1/4C butter, 1/4C powdered sugar
Filling: 2C fresh blueberries, well drained, 2/3C sugar, 1/2C flour, 1/4t salt, 3/4C sour cream
Preheat oven to 350F. Cream butter with powdered sugar. Set aside. In separate bowl, sift dry ingredients of crust. Add to butter mixture. Form dough. Press into greased 9″ square baking dish. Bake 7 minutes. Remove from oven. Sprinkle blueberries evenly into crust. Sift dry ingredients of filling. Add sour cream. Blend well. Spread evenly over blueberries. Bake 40-45 minutes, or until set. Cool. Cut into bars.
