Oatmeal Cherry Cookies

Today I made Oatmeal Cherry Cookies!

1 3/4C flour, 1 1/4C oats, 1/2t baking powder
1/2t salt, 1/2C butter, 1/4C brown sugar, 1/2C white sugar
1 egg, 1t van 3/4 coarsely chopped fresh or frozen cherries,
well drained or sieved

Preheat oven to 325F. Cream butter and sugars. Stir in egg. Sift together dry ingredients. Blend well into wet ingredients. Stir in oatmeal. Blend well. Fold in cherries. Drop by tablespoons onto greased cookie sheet.

Oatmeal Cherry Cookies

Bake 20-25 minutes or until lightly browned on bottoms. Cool on racks.

Strawberry Mousse

Today I made Strawberry Mousse!

1 pint fresh strawberries, 2T sweetened condensed milk, 2T powdered sugar, 1t vanilla, 4oz cream cheese, 2T lemon juice, 1/4C strawberry preserves, 8oz non-dairy whipped topping

Mix lemon juice with sweetened condensed milk. Stir in powdered sugar. Add vanilla. Blend well. Mix in cream cheese. Whip whipped topping. Fold into cream cheese mixture. Swirl in preserves with two strokes of a rubber spatula. Spoon into serving dish. Top with strawberries. Chill until very cold.

Whole Wheat Chocolate Cashew Cake

Today I made Whole Wheat Chocolate Cashew Cake!

4 eggs, 4T brown sugar, 3 oz chocolate chips, melted and slightly cooled, 3/4C whole wheat flour, 1/4C cocoa power, 1/4t baking powder, 3T vegetable oil, 2C cashews

Preheat oven to 350F. Beat together brown sugar and eggs. Blend well. Stir in oil. Blend well. In separate bowl, sift together dry ingredients. Stir into wet. Melt chocolate. Stir chocolate into cocoa mixture. Blend well. Fold in cashews. Spoon into 9″X13″ greased baking dish. Spread evenly. Bake 20-25 minutes or until toothpick comes out clean.
