Today I made Chocolate Sandwich Cookies!
1/2C butter, 1 1/4C sugar, 2 eggs, 2 oz. bittersweet chocolate, melted and cooled, 2C flour, 2t baking powder, 1/2t salt, 2T heavy cream
Filling: 1 oz. bittersweet chocolate, 1C to 1 1/2C powdered sugar; melt chocolate, mix in powdered sugar until barely spreadable. Spread on cooled cookies.
Preheat oven to 350F. Cream butter and sugar in large bowl. In saucepan, melt 2 oz. chocolate. Add to butter mixture. Blend well. Add eggs. Blend well. In separate bowl, sift together dry ingredients. Add to wet alternately with milk, beginning and ending with dry. Drop by tablespoon onto greased cookie sheets. Bake 10-12 minutes, or until firm in centers. Cool.
