Peppermint White Cake

Fudge Swirl Chocolate Ice Cream

Today I made Fudge Swirl Chocolate Ice Cream!

1C hot water, 3T unsweetened cocoa powder, 1C milk, 1C sugar, 6 egg yolks, 2C heavy cream

Fudge Swirl: 1/2C heavy cream, 1/8C light or dark corn syrup, 1/2C chocolate chips

Boil water. Pour over cocoa powder in heat-proof container. Stir until smooth. Stir in sugar. In saucepan, boil milk. Pour in cocoa mixture. Whisk yolks. Whisk 2T of milk mixture into yolks. Whisk entire yolk mixture into milk mixture. Stir in cream. Cook until the batter does not flow together again when you run your finger over the back of the spoon, but do not boil. Pour into heatproof dish. Chill 2 or more hours. Transfer to ice cream maker. Fudge Swirl: Heat cream with corn syrup, stirring constantly. When boiling, remove from heat. Pour over chips. Stir until smooth. After ice cream comes out of ice cream maker, drizzle fudge onto ice cream. Freeze until firm.

Mocha Rum Cake

Today I made Mocha Rum Cake!

4 eggs, 2C butter, 2 1/2C sugar, 1/2C rum, 1C freshly brewed coffee, cooled, 2C flour, 1C unsweetened cocoa powder, 1 1/2t baking powder

Preheat oven to 350F.

Mocha Rum Cake

Melt butter with rum and cocoa. Stir until smooth. Add 1/2C sugar. Cool. Beat eggs and remaining sugar together. Add to butter mixture. Blend well. Add coffee. Blend well. In separate bowl, sift together dry ingredients. Add to wet. Stir until just blended. Pour into greased tube pan. Bake 30 minutes or until knife comes out clean when inserted in cake.
