Cranberry Cake

Today we made Cranberry Cake!

This recipe is from the book, “1001 Cupcakes, Cookies and Other Tempting Treats,” Consultant Editor, Susanna Tee; published in 2009.

9T butter, 1C brown sugar, 2 eggs, lightly beaten, 1t vanilla, 1 3/4C flour, 1t baking powder, heaping 3/4C dried cranberries, powered sugar

Preheat oven to 350F.

Cranberry Cake

Cream together butter and sugar. Stir in eggs. In separate bowl, sift together dry ingredients. Add to wet. Stir until just blended. Fold in cranberries. Spoon into 8″ shallow, round or rectangular greased cake pan. Bake 40-45 minutes or until risen and golden brown. Let cool in pan.

Cranberry Cake

Dust with powdered sugar just before serving.
