Banana Cake

Today I made Banana Cake!

3/4C butter, 1 1/2C sugar, 3 eggs, 1C mashed, ripe banana, 2 scant C flour, 1/2t baking powder, 3/4t baking soda, 1/2t salt, 1t almond extract, 1/4C yogurt

Preheat oven to 350F. Cream butter with sugar. Stir in eggs and yogurt. Add banana. Stir in extract. Blend well. In separate bowl, sift together dry ingredients. Add to wet. Blend well. Turn into greased 9″X13″ pan. Bake 25-30 minutes or until toothpick inserted in center comes out clean.

Date Sweet Potato Pie

Today I made Date Sweet Potato Pie!

1 pie shell, 1 medium sweet potato, baked and mashed, 1 1/2C skim milk, 1t vanilla, 2T butter, 1/2t cinnamon, 1/4t nutmeg, 1/2C sugar, 2 whole eggs or 3 egg whites

Preheat oven to 350F. Prick pie shell with fork so the pie won’t explode in the oven. Bake empty shell 10 minutes. Remove from oven. Set aside. Cook dates in milk on medium heat until tiny bubbles appear in milk. Remove from heat. Meanwhile, cream butter and sugar. Add eggs or whites. Blend well. Add milk mixture to mashed sweet potato. Add spices to milk mixture. Stir in butter mixture. Blend well. Turn into pie shell. Bake 40 minutes or until set. Cool before cutting.

Butterscotch Bread Pudding

Today I made Butterscotch Bread Pudding!

butter for greasing, 1C brown sugar, 2C stale bread cubes, 3C milk, 2 eggs, beaten, 1t vanilla, 1/4C butter

Preheat oven to 350F.

Spread brown sugar evenly into the bottom of a buttered casserole dish.

Mix beaten eggs with milk. Stir in vanilla. Sprinkle stale bread cubes onto brown sugar. Place pats of of butter on top of bread. Add milk/egg. Make sure all bread is wet with milk/egg. Bake 30 minutes or until set.

Sour Cream Spice Cookies

Today I made Sour Cream Spice Cookies!

1C butter, 3/4C sugar, 1 egg yolk, 1t vanilla, 1 1/4C sour cream, 2 3/4C flour, 1/2t salt, 1/4t baking soda, cinnamon, nutmeg, cardamom, ginger, allspice and/or ground cloves

I used fat-free sour cream.

Preheat oven to 375F.

Cream butter and sugar. Beat in egg yolk. Beat in sour cream. Stir in vanilla.
Sift dry ingredients, except for spices. Blend into wet. Divide batter pursuant to spice preferences– adding 1/4t to 1t of desired spice per fraction of batter.
Turn each fraction of batter into a separate pastry bag. Using the rose tip, push through pastry bag onto ungreased cookie sheets. Bake 10-12 minutes or until lightly browned on bottoms.
