Mock Macaroons

Today I made Mock Macaroons!

1 medium potato, baked and mashed, 14oz shredded coconut, 1/4t salt, 1t vanilla extract, 3C powdered sugar, 10oz bittersweet chocolate, 1/3C water

Thoroughly mix first four ingredients. Gradually work in powdered sugar. Blend well.

Shape into balls and place on foil-lined cookie sheet. Chill 2 or more hours. Melt chocolate with water, stirring constantly. Dip each ball in chocolate.

Cherry Fruitcake

Today I made Cherry Fruitcake!

12oz fresh pitted cherries, halved, 2C flour, 1 1/2t baking powder, 1t salt, 3 eggs, 1C sugar, 4oz butter, melted, 1/2C water, 2t vanilla extract, 1/2C dark rum, 1/2C each of 4 kinds of chopped, dried fruit (dates, pineapple, cranberries, raisins)

Preheat oven to 400F.

Soak dried fruit in rum at least one half hour. Whisk eggs and sugar until almost ribbony. Stir in butter. Stir in water. Stir in vanilla extract. Make a well in the center of dry ingredients. Stir in wet until just blended. Fold in rum-soaked fruit. Distribute cherries evenly on bottom of greased 9″ springform pan. Turn batter into prepared pan. Bake 30 minutes. Lower temperature to 350. Bake 10 more minutes or until knife inserted into center of cake comes out clean. Cool 20 minutes. Release springform.

Sweet Potato Apple Cake

Today I made Sweet Potato Apple Cake (aka Sweet Potato Pound Cake)!

This recipe is from the book, “All Cakes Considered” by Melissa Gray, published in 2009.

I made half the recipe and omitted the maple extract and parchment paper.

4 cold, baked and mashed medium sweet potatoes, 1C butter, 1C sugar, 1C dark brown sugar, 4 eggs, 3 1/2C flour, 2t baking powder, 1/2t baking soda, 1/2t nutmeg, 1/2t cinnamon, 1/2t salt, 1/2C milk, 1t vanilla extract, 1t maple extract, 1/2C diced apples

Preheat oven to 325F. Line a tube pan with parchment paper, and grease the paper. Cream butter. Add pre-mixed sugars. Add eggs. Add potatoes. In separate bowl, whisk dry ingredients. Mix milk and extracts. Add dry ingredients and milk alternately beginning and ending with dry. Mix on medium-high for 2 minutes. Reduce speed to low. Add apples. Turn into pan evenly. Bake 1 hour, 15 minutes or until knife inserted in cake comes out clean.

Banana Ricotta Cake

Today I made Banana Ricotta Cake!

3 ripe mashed small bananas, 4T ricotta cheese, 2 eggs, 2 scant C flour, 3/4C sugar, 1t baking soda, 3/4t baking powder, 1/2t salt, 1/2C butter

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, cream butter and sugar. Add eggs. Add bananas. Blend well. Add ricotta. Blend well. Stir in dry ingredients until just blended. Turn into a greased 9″ springform pan. Bake 25-30 minutes or until lightly browned.
