Pear Prune Cake

Today I made Pear Prune Cake!

1 scant C flour, 1C sugar, 1 1/2t baking powder, 1/2t baking soda, 5T butter, melted, 4.25 oz pitted prunes, 1/4C water, 2 eggs, 1/4C milk, 2 pears, peeled, cored and chopped medium finely

Preheat oven to 375F. Cook prunes in water over medium heat until soft, about 10 minutes. Mash. Cool. Melt butter. Cool. Meanwhile, beat eggs with sugar until light colored. Add butter. Mix prunes with pears. In separate bowl, sift together dry ingredients. To the batter, add milk, alternating with dry ingredients, beginning and ending with dry. Mix in fruit until just blended. Turn into greased tube pan. Bake 30-35 minutes or until knife inserted in center of cake comes out clean.

Strawberry-Cream-Cheese Rolls

Today I made Strawberry-Cream-Cheese Rolls!

1 envelope (1/4 oz) yeast, 1/4C water, 1/2C sugar, 1 scant C fat-free milk, 4-5C flour, 2 eggs, 8 oz strawberry flavored cream cheese

Place yeast in bowl. Pour warm (105 degrees F – 115 degrees F) milk over yeast. Stir to dissolve. Wait a couple of minutes. Mixture should look murky.

Stir in 2C of flour. Stir in remaining ingredients. Add enough flour to form dough into an elastic ball that is still slightly sticky. Place in a greased bowl. Turn ball over once. Cover bowl with plastic wrap and let rise about an hour, or until dough is doubled in volume. Punch down dough. Knead a few times on lightly floured board. Divide dough into twelve parts. Take one and stretch into a rectangle approximately 2″ wide by 4″ long by 1/4″ high. Roll up. Place on greased cookie sheet. Repeat with remaining dough. Cover with plastic wrap and let rise half an hour or until rolls are doubled in volume. Preheat oven to 375F. Remove plastic wrap and bake 15 to 20 minutes or until golden brown.

Dried Fruit Biscotti

Today I made Dried Fruit Biscotti!

4 to 4 1/2C flour, 1T baking powder, 1 1/4C sugar, 1/2C butter, 3 eggs, 1t lemon or orange extract, 4.25 oz each of dried apricots, prunes, dried figs and dried pineapple, chopped medium fine

Preheat oven to 350F.

Melt butter.

Meanwhile, whisk eggs with sugar until blended.

Sift together flour and baking powder. Add melted butter to egg mixture.

Whisk in extract. Blend well.

Add dry ingredients. Stir with spoon until a sticky dough is formed, that can be molded into loaves.

Work in dried fruit.

Using floured hands, shape two 13″ X 2″ logs and place on foil-lined cookie sheet.

Bake 25-30 minutes or until lightly browned. Cool 30 minutes. Cut diagonal 1/2″ slices using serrated knife. Place slices back on foil-lined sheet and bake 12 minutes. Turn slices over and bake for another 8 minutes.

Transfer to rack and cool completely.
