Today I made Lime Loaf!

1 1/2C flour, 1/4t baking soda, 3/4t baking powder, 1t vanilla, 14 oz fat free sweetened condensed milk, 1/2C skim milk, 2 eggs, 1/3C butter, melted and cooled slightly, 2T lime juice

Icing: 3T lime juice, 2 to 2 1/2C powdered sugar

Preheat oven to 325F. Sift together dry ingredients. In separate bowl, mix milks, egg and melted butter.

Stir in lime juice and vanilla. Blend well.

Stir in dry ingredients until just combined.

Pour batter into a greased loaf pan.

Bake 35-45 minutes or until a toothpick inserted in center of cake comes out clean. Let cool in pan 10 minutes. Remove from pan and cool completely.

Prick loaf with fork.

Stir together icing ingredients until barely pourable.

Pour icing on cake. Chill half an hour or until icing is set.

Mango Custard Pie

Today I made Mango Custard Pie!

1 large or 2 small mangoes, peeled and chopped into 1/2″ chunks, 1 graham cracker pie shell, 1 1/2C skim milk, 1/4C cornstarch for thick custard (or 3T cornstarch for somewhat thinner custard), 1/2C sugar, 2 eggs, slightly beaten

Preheat oven to 350F.

Stir together cornstarch and sugar in saucepan.

Mix in milk.

Stir constantly over medium heat until thick, and running a finger over the back of the mixing spoon leaves a permanent streak.

Reduce heat to low. Stir in eggs.

Cook 5 more minutes, stirring vigorously. Remove from heat. Arrange mango chunks in bottom of pie shell.

Spoon custard over chunks.

Cool 20 minutes. Chill 1 or more hours.

Peanut Butter Cookies

Today I made Peanut Butter Cookies (aka Peanut Butter Macaroons)!

This recipe is from the book, “The Ultimate Peanut Butter Book” by Bruce Weinstein and Mark Scarbrough, 2005. The final product is not in the least like macaroons.

16 oz creamy peanut butter, 2C sugar, 6 egg whites

Preheat oven to 375F. With electric mixer, beat peanut butter and sugar until very smooth, about 5 minutes.

Beat whites into mixture 1T at a time until smooth, thick and pastelike, about 5 minutes.

Turn into a pastry bag and squeeze out 1″ rounds, 1″ apart onto parchment paper lined sheets (I used greased cookie sheets instead).

Bake in center of oven until dry and set, about 11 minutes. Cool 5 minutes. Remove from sheets.

Today I made Cinnamon Bread!

1/4 oz dry yeast (1 envelope), 1 egg, 4-5C flour, 1/4C warm water, 6T butter, softened, 6T fat free sour cream, 1/4C ground cinnamon, 1/2C sugar

Pour warm water (105 to 115 degrees Fahrenheit) on yeast.

Stir until yeast is dissolved.

Stir in 1C flour.

Stir in butter. Chop into small chunks, which need not be fully blended in.

Stir in egg.

Stir in more flour, and sour cream.

Add enough flour to form a dough that is elastic and still a little tacky. Place in greased bowl. Cover bowl with plastic wrap and chill overnight. Punch down dough, knead two minutes or until smooth, adding more flour if necessary. On floured board, roll out into two rectangles. Stir together sugar and cinnamon. For a sweeter, spicier bread– add additional sugar and cinnamon.

Spoon onto rectangles.

Roll up each and put sealed side down on greased cookie sheet.

Prick with fork if there are no gaps in loaves. Cover with plastic wrap and let rise for 1 hour. Remove wrap. Preheat oven to 375F.

Bake 25 minutes or until lightly browned.

Chocolate Blueberry Cake

Today I made Chocolate Blueberry Cake!

8 oz fresh blueberries, halved, 14 oz fat free sweetened condensed milk, 1C water, 1/2C cocoa, 2C flour, 3t baking powder, 1t salt

Preheat oven to 325F. Boil water.

Stir in cocoa until dissolved and thickened. Cool.

Mix with milk. Blend well.
