Today I made Strawberry Mint Scones!
3C flour, 1C sugar, 4t baking powder, 1t salt, 8oz cold reduced-fat cream cheese, 2t mint extract, 1C skim milk, 1 pint strawberries, hulled and chopped into 1/4″ pieces
Preheat oven to 350F.
Sift dry ingredients. Stir in sugar. Cut in cream cheese with fork. Do not overwork.
In separate bowl, mix chopped strawberries with extract and milk. Blend well.
Make a “well” in the dry mixture.
Pour in wet.
Stir just until combined. Turn into non-stick or lined muffin tins.
Bake 30-35 minutes or until golden.
