PB Chocolate Cheesecake

Today I made Peanut Butter Chocolate Cheesecake!

1/3C peanut butter, 3 eggs, 1t vanilla, 1/4t salt, 3T flour, 12 oz chips, 16 oz fat free cream cheese

Preheat oven to 350F.

Beat cream cheese and peanut butter.

Mix in sugar. Then eggs.

Stir in vanilla and salt. Blend well.

Stir in chocolate chips until just combined.

Turn into greased 9″ round pan.

Bake 40-45 minutes or until almost set. Cool before cutting.

Banana Waffles

Today I made Banana Waffles!

2 1/2C flour, 1/3C brown sugar, 2t baking powder, 1t baking soda, 1/2t salt, 4 eggs, 1 1/2C milk, 3 bananas, mashed, 6T butter, melted

Sift together dry ingredients. Stir in brown sugar and salt. In separate bowl, whisk eggs and milk.

Add bananas alternately with melted butter and dry ingredients, beginning and ending with dry.

Turn into preheated waffle iron.

Serve with powdered sugar if desired.

Pumpkin Biscotti

Today I made Pumpkin Biscotti!

4T butter, 1/2C brown sugar, 2 eggs, 15 oz pumpkin puree, 3C flour, 1t baking powder, 1T cinnamon, 1t vanilla extract

Preheat oven to 350F.

Sift toegther dry ignredients. In separate bowl, cream butter with brown sugar.

Add eggs.

Stir in pumpkin.

Stir in vanilla.

Add dry ingredients and form a dough.

Form into a loaf on greased cookie sheet.

Bake 30 minutes.

Cut into 1″ wide by 4 to 5″ long slices. Place on cookie sheet.

Reduce oven to 325F. Bake about another 20 minutes or until crunchy.

Pear Walnut Tart

Today I made Pear Walnut Tart!

1C butter, 2/3C sugar, 1/2t salt, 2 1/2C flour, 1 peeled medium pear, chopped in 1/2″ pieces, 1/2C coarsely chopped walnuts, 1 egg, 3T brown sugar, 1T flour, 1/2t ground cloves

Preheat oven to 350F.

Cream butter with sugar and salt. [I made half the crust amount and used the remaining filling elsewhere.]

Work in flour to form a dough.

Roll out on floured board to form one or more crusts of desired shapes,and sizes, 1/2″ high with borders that are 1/4″ high and 1/2″ wide. Place on greased cookie sheet. Mix brown sugar with cloves and flour.

Stir in egg. Blend well.

Stir into pears and walnuts. Blend well.

Bake 10-20 minutes or until crust is lightly browned. Cool before cutting.
