4C coarsely chopped fresh cantaloupe, 1/4C sugar, 1 1/2C water, 3T sweet red wine

Puree cantaloupe in blender.

Pour puree into large bowl.

Heat sugar and water until almost boiling, stirring until sugar is dissolved.

Add to puree.

Add wine.

Blend well.

Freeze 6 or more hours.

Peanut Butter Waffles

Today I made Peanut Butter Waffles!

1 3/4C flour, 1/3C brown sugar, 1 3/4t baking powder, 1/2t salt, 1/3C peanut butter, 4 eggs, 2C skim milk, 1T butter, melted

Sift together dry ingredients, including brown sugar.

In separate bowl, beat eggs.

Mix in milk.

Add melted butter.

Stir in peanut butter.

Make a well in dry ingredients. Mix in wet until just blended.

Turn into preheated waffle iron. The heat radiates from the center of the iron, so add the batter on the edges first.

Pineapple Cookie Bars

Today I made Pineapple Cookie Bars!

1/2C butter, melted, 1 egg, 1C flour, 1/4C powdered sugar, 1/2C sugar, 2 eggs, 4T pineapple juice

Preheat oven to 350F.

Mix flour and powdered sugar.

Add melted butter.

Today I made Blackberry Ice Milk!

24 oz fresh blackberries, 14 oz sweetened condensed milk, 1/2C skim milk

Puree blackberries in blender.

Push through sieve to remove seeds. Use seeds for another recipe.
