Today we made Cherry Vodka Chip Ice Cream!
3 egg yolks, 1C lowfat milk, 16 oz heavy cream, 1/2C sugar, 2C halved fresh cherries, 1t vanilla extract, 1/4t salt, 1C chocolate chips, 1 1/2C vodka
Place cherries in shallow dish. Soak in vodka, covered, at least 2 hours.
In saucepan, beat milk with yolks, salt and sugar over medium heat until just starting to boil, stirring constantly.
Chill at least 3 hours. Stir in cream, vanilla and well-drained cherries.
Churn in ice cream maker. Fold in chocolate chips. Freeze at least 2 hours.
