Today we made Beet Chip Scones!
3 3/4C flour, 1t salt, 1/4 sugar, 3T baking powder, 1/2C cold butter, 1 1/2C milk, 12 oz chocolate chips, 4 medium beets
Preheat oven to 375F.
Dice beets into 3/4″ pieces and steam in spring water.
Mix together dry ingredients. Cut in butter.
Add milk and blend until almost combined.
Fold in beets and chips. Don’t overmix.
Drop 2T at a time onto greased cookie sheets.
Bake 15-18 minutes or until bottoms are lightly browned.
