Dried Fruit Muffins

Today we made Dried Fruit Muffins!

2C flour, 3t baking powder, 1T cinnamon, 3T brown sugar, 1 egg, 1 1/4C milk, 1/4C butter, melted, 2 oz dried pineapple, 2 oz dried papaya, 4 oz dried cranberries, 2 oz walnuts

Preheat oven to 350F.

Chop papaya and pineapple medium fine.

Chop walnuts medium fine, also. Combine with cranberries.

Sift together dry ingredients. Stir in brown sugar. In separate bowl, mix together egg, milk and melted butter.

Make a well in the dry ingredients and add wet.

Stir until almost blended.

Fold in fruit until just blended.

Turn into lined, nonstick or greased muffin tin.

Bake 15-18 minutes or until toothpick inserted in center of center muffin emerges clean. Do no overbake.

Squash Cinnamon Muffins

Today we made Squash Cinnamon Muffins!

2C baked, seeded, mashed butternut squash, 1/2 coarsely chopped walnuts, 1 3/4C flour, 1/2t cinnamon, 1/2t nutmeg, 2t baking powder, 1/2t salt, 2 eggs, 1/2C sugar, 1/4C butter, melted, 1/2C skim milk, 1/2t almond extract

Topping: 3T sugar, 1T cinnamon

Preheat oven to 375F.

Sift together dry ingredients. In separate bowl, beat together melted butter, eggs, sugar, milk and extract.

Mix in squash. Blend well.

Mix topping ingredients. Sprinkle on muffins.

Date Carrot Walnut Chiffon Pie

14 oz sweetened condensed milk, 2 eggs, separated, 10 oz chopped, pitted dates, 1C chopped walnuts, 1T vanilla, 1 t salt, 8 oz baby carrots, chopped into discs, 3T sugar, 2 graham cracker pie shells

MAKES 2 PIES

Preheat oven to 425F. Beat yolks with milk.

Turn into shells.

Bake 10 minutes. Reduce heat to 300F. Bake 20 more minutes or until lightly browned.
