Today we made Apple Custard Pie!
2 eggs, 14 oz sweetened condensed milk, 2/3C skim milk, 1 extra large apple or 2 small apples, 1 graham cracker pie shell
Preheat oven to 350F.
Mix milks with eggs. Blend well.
Batter will be thin and spill easily. Put a baking sheet under the pie shell. Pour batter into pie shell.
Slice apples into crescents 1/8″ high and arrange in a circle in batter. Slices will rise when baking.
Bake 40-45 minutes or until set in center. Cool. Chill.
Today we made Honey Gelato!
4T cornstarch, 3 1/2C whole milk, 3/4C honey
Bring cornstarch, 3C milk and honey to boil.
When bubbling, add remaining milk and cook until the consistency of pudding.
Run through sieve.
Freeze. Serve with chocolate syrup.
Today we made Peanut Butter Nut Pie!
1 graham cracker pie shell, 3/4C light corn syrup, 1/2C creamy peanut butter, 3 eggs, 2/3C brown sugar, 1/2C chopped almonds, 3/4C peanuts, 1t vanilla
Preheat oven to 325F. Mix together corn syrup, peanut butter and eggs until smooth.
Stir in brown sugar and vanilla.
Blend well. Stir in almonds and peanuts.
Pour into pie shell.
Bake 45-50 minutes or until almost set in the middle. Cool before cutting.
Today we made Chocolate Marshmallow Cake!
10T butter, 10T white sugar, 3 eggs, 1C powdered sugar, 1 1/8C flour, 1/3C cocoa, 6 oz marshmallows
Preheat oven to 325F. Cream buttter and white sugar.
Sift together dry ingredients. Add to wet.
Turn half of batter into greased 9″ round cake pan.
Place marshmallows on top.
Spread remaining batter evenly on top of marshmallows.
Bake 45-50 minutes or until cake starts to pull away from sides of pan. Cool before cutting.
