Today we made Apple Honey Muffins!
2C flour, 2t baking powder, 3T sugar, 1 egg, 1/2C apple juice, 1/2C honey, 1/4C butter, melted; 2 medium Granny Smith apples, peeled and chopped into 1/2″ to 1/4″ pieces
Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix wet ingredients, including apples. Blend well.
Make a well in the dry. Add the wet.
Stir until just blended. Turn into lined, nonstick or greased muffin tin.
Bake 15-20 minutes or until lightly browned.
