Today we made Peach Souffle!
2 ripe or overripe medium peaches, peeled, pitted and coarsely chopped; butter, powdered sugar, 1/2C vodka, 1/3C sugar, 3 whites of large eggs
Add 6T sugar to vodka in a shallow glass dish or glass bowl and stir until dissolved.
Stir in peaches. Cover with plastic wrap and soak for at least 30 minutes.
Preheat oven to 350F.
Thoroughly butter a souffle dish. Generously dust with powdered sugar. Beat egg whites until soft peaks form.
Drain peaches. Gradually beat 1/3C sugar into whites until stiff peaks form.
Quickly fold in peaches.
Spoon into prepared dish.
Bake 25-30 minutes or until puffed and browned.
Today we made Melon Cranberry Sorbet!
1C chopped melon– any with pale orange flesh (cantaloupe, muskmelon, etc.), 1/3C sugar, 6 oz dried cranberries, 1/2C vodka
Soak cranberries in vodka 2 or more hours. Drain and reserve vodka for another recipe.
Puree melon in blender.
Mix in sugar.
Pour into final container, such as a souffle dish.
Fold in cranberries.
Freeze until of desired consistency.
Today we made Cherry Vodka Chip Ice Cream!
3 egg yolks, 1C lowfat milk, 16 oz heavy cream, 1/2C sugar, 2C halved fresh cherries, 1t vanilla extract, 1/4t salt, 1C chocolate chips, 1 1/2C vodka
Place cherries in shallow dish. Soak in vodka, covered, at least 2 hours.
In saucepan, beat milk with yolks, salt and sugar over medium heat until just starting to boil, stirring constantly.
Chill at least 3 hours. Stir in cream, vanilla and well-drained cherries.
Churn in ice cream maker. Fold in chocolate chips. Freeze at least 2 hours.
Today I made Vodka Cheesecake!
12 oz fat-free cream cheese, 1C sugar, 3T cornstarch, 3 eggs, 1/4C citrus vodka, 4 oz lowfat sour cream
Preheat oven to 375.
Beat cream cheese and sugar until smooth.
Add sour cream. Add cornstarch and vodka. Blend well.
Turn into greased 9″ round cake pan.
Bake 40-50 minutes or until set.
Today I made Mango Pineapple Sherbet!
1 mango, peeled and chopped in 1/4″ pieces, 14 oz sweetened condensed milk, 2C pineapple juice, 1/2C citrus vodka
Soak mango pieces in citrus vodka in a glass casserole dish covered with plastic wrap for 2 or more hours.
Mix drained mango with remaining ingredients.
Today I made Lemon Vodka Ices!
juice of 2 lemons, 2C sugar, 3C water, 1/4C citrus vodka
Heat water until just boiling.
Turn off heat. Stir in sugar.
Stir in lemon juice and vodka.
Blend well. Freeze overnight.
Today I made Lemon Vodka Oat Bars!
1 1/4 C flour, 1t baking powder, 1/2t salt, 1/2C butter, 1C sugar, 2 eggs, 2C oats
Filling: 1 1/2 C sugar, 1/4C cornstarch, 1/4C flour, 1/4C citrus vodka, juice of 2 lemons, 4 eggs
Preheat oven to 350F.
Sift together dry ingredients. Stir in oats. In separate bowl, cream butter and sugar.
Add eggs. Blend well.
Stir in dry ingredients.
Turn into greased rectangular pan.
Bake 20 minutes or until barely tan. Keep oven at 350F.
Beat eggs with sugar.
Sift in dry ingredients.
Stir in juice and vodka.
Press down with fork on crust.
Pour on filling.
Bake 30 minutes or until set. Cool 10 minutes. Serve warm.
Today I made Blueberry Vodka Soup or Sorbet!
3/4C fresh blueberries, 2C fresh blueberries, 3/4C sugar, 2C plain or citrus vodka
Soak 2C blueberries in vodka 2 or more hours.
Push 3/4C blueberries through a seive. Use skins for another recipe. Mix blueberry puree and sugar.
Drain blueberries from vodka. Use vodka for another recipe.
Stir into puree mixture. Blend well.
For soup, chill 3 or more hours.
For sorbet, freeze overnight.
