Today we made Banana Blackberry Bread!

4oz fresh blackberries, 2 medium bananas, mashed, 3T butter, melted, 1C sugar, 1 egg, 1T almond extract, 1t baking soda, 1/2t salt, 1 1/2C flour

Preheat oven 350F. Puree berries in blender. Push through fine-mesh sieve. In separate bowl, sift together flour, baking soda and salt. In separate bowl, beat egg and sugar.

Stir in blackberries, bananas and extract.

Mix in melted butter. Blend well.

Mix in dry ingredients until just blended.

Turn into greased extra large loaf pan.

Bake 45-50 minutes or until toothpick inserted in center emerges clean.

Mango Blackberry Sorbet

Today we made Mango Blackberry Sorbet!

1C sugar, 1C water, 4 oz fresh blackberries, 1 medium mango, peeled and chopped

Puree blackberries in blender. Push through fine mesh sieve. Puree mango.

Stir into blackberries. In small saucepan, heat sugar and water.

Stir constantly until sugar is dissolved. Add to fruit.

Blackberry Ices

Today we made Blackberry Ices!

12 oz fresh blackberries, 2T half and half, 1C powdered sugar

Rinse, drain and dry berries thoroughly. Push through fine mesh sieve. Discard seeds or use for another recipe.

Today we made Blackberry Sorbet!

6 oz fresh ripe blackberries, 1C water, 1 1/2T cornstarch, 1/4C sugar

Push berries through fine mesh sieve.

Heat water with cornstarch, stirring constantly until thickened.

Remove from heat. Quickly stir in sugar. Blend well.

Today we made Blackberry Cake!

1/2C butter, 1C sugar, 1t vanilla, 2 eggs, 2 1/2C flour, 2t baking powder, 12 oz fresh blackberries

Preheat oven to 350F.

Sift together dry ingredients. In separate bowl, cream butter and sugar.

Mix in vanilla. Push blackberries through a fine-mesh sieve.

Turn into greased rectangular baking pan.

Bake 20-25 minutes or until toothpick comes out clean. Top with chocolate syrup.

Today I made Blackberry Ice Milk!

24 oz fresh blackberries, 14 oz sweetened condensed milk, 1/2C skim milk

Puree blackberries in blender.

Push through sieve to remove seeds. Use seeds for another recipe.
