Cranberry Brownies

Today we made Cranberry Brownies!

3/4C flour, 3 eggs, 1T vanilla extract, 3/4C unsweetened cocoa powder, 1t salt, 2C sugar, 6T butter, 1/2t baking soda, 1C chocolate chips, 1C coarsely chopped fresh raw cranberries

Preheat oven to 325F. Melt butter with chocolate chips.

Add sugar. Blend well. Cool 20 minutes.

Stir in eggs. Blend well.

Stir in vanilla extract.

In separate bowl, sift together flour, salt, cocoa powder and baking soda. Add to melted chocolate mixture.

Stir in cranberries.

Turn into greased 8″X8″ pan.

Bake 50-60 minutes or until toothpick inserted in center emerges almost clean.

Prune Brownies

Today we made Prune Brownies!

3/4C flour, 1T vanilla extract, 3 eggs, 1C unsweetened cocoa powder, 1t salt, 1/2t baking powder, 2C sugar, 6T butter, 1 1/4C chocolate chips, 1/2C loosely packed, coarsely chopped prunes

Preheat oven to 325F. Melt butter with 1 CUP chocolate chips.

In small bowl, sift together flour, salt, cocoa and baking powder. Add eggs to chocolate mixture.

Today we made Cherry Brownies!

1C chocolate chips, 4T butter, 1C brown sugar, 1/2C flour, 1/4t salt, 2C pitted halved fresh cherries, 2 eggs

Melt chocolate chips and butter, stirring until smooth.

Remove from heat and add brown sugar. Set aside 20 minutes to cool.

Date Honey Brownies

Today we made Date Honey Brownies!

1C chocolate chips, 6T butter, 2 eggs, 1/3C honey, 1t vanilla extract, 1/2C flour, 1/2t baking powder, dash salt, 1C chopped dried dates

Preheat oven to 350F.

Melt chocolate chips and butter. Stir until smooth. In bowl, stir together eggs, honey and vanilla.

Stir in salt. Fold in dates.

Bake 25-30 minutes or until edges come away from sides of pan. Cool before cutting with serrated knife.

Potato Brownies

Today I made Potato Brownies!

1/2C butter, 4 oz bittersweet chocolate, 2 eggs, 1 1/2C sugar, 2 medium potatoes, baked, peeled and mashed, 1C flour

Melt butter with chocolate.

Cool 20 minutes. Preheat oven to 350F.

Today I made Anise Brownies!

8oz bittersweet chocolate, 1/2C butter, 2 eggs, 1C sugar, 1/2C flour, 1/2t salt, 1T anise extract

Preheat oven to 350F.

Melt chocolate and butter over low heat. Cool ten minutes.

In bowl, beat eggs and sugar until thick and pale.

Turn into greased 9″ X 13″ pan, or if desiring taller brownies, a greased 8″ X 8″ pan.

Bake 15 to 20 minutes or until toothpick inserted in center comes out nearly clean. Do not overbake. Disclaimer: Cool 20 minutes to allow to set, and avoid tongue-burning.

Peanut Butter Swirl Brownies

Today I made Peanut Butter Swirl Brownies!

4 oz unsweetened chocolate, 3/4C butter, 1 1/2C sugar, 3 eggs, 1C flour, 4 oz chocolate chips, 1/2 crunchy peanut butter

Preheat oven to 350F. Melt chocolate and butter. Stir until smooth. Add sugar. Blend well. Cool 20 minutes. Beat in eggs. Add flour. Blend well. Turn into greased 13″X9″ pan. Batter will flow to edges while baking. Bake 25 minutes or until toothpick inserted in center comes out clean. Upon removing from oven, sprinkle chocolate chips on top. Let stand one minute. Swirl with peanut butter. Cool completely. Chill 1 hour before cutting.

Maraschino Liqueur Brownies

Today I made Maraschino Liqueur Brownies!

5oz unsweetened chocolate, 12T butter, 2C sugar, 6T Maraschino liqueur, 4 eggs, 1C flour

Preheat oven to 325F.

Melt chocolate and butter together. Place sugar in a bowl. Stir in chocolate mixture. Add eggs. Beat until velvety. Add flour alternately with liqueur. Blend well. Turn into greased 8″X13″ baking dish. Bake until crust forms on top and knife inserted in center emerges with a few crumbs, 45-50 minutes.

Mocha Brownies

Today I made Mocha Brownies!

1 1/2C sugar, 1C butter, melted, 1/4 cup brewed coffee, cooled, 3 eggs, 2/3C flour, 2/3C cocoa, 1/2t baking powder, 1/4t salt

Preheat oven to 350F. Melt butter. Mix with sugar. Stir in coffee.Stir in eggs until just blended. In separate bowl, sift together dry ingredients. Add to wet. Turn into greased 9″X13″ baking dish. Bake 20-25 minutes or until toothpick in center comes out almost clean.

Marshmallow Brownies

Today I made Marshmallow Brownies!

1/3C butter, 2 oz unsweetened chocolate, 1C sugar, 2 eggs, 1C flour, 1/2t baking powder, 1/2t salt, 1t vanilla, 1C mini marshmallows

Preheat oven to 350F. Heat butter, chocolate and sugar, stirring until blended and melted. Cool 20 minutes. Add eggs. Blend well. In separate bowl, sift dry ingredients. Stir into wet until just blended. Add vanilla. Spread evenly onto a greased cookie sheet. Bake 15-20 minutes, or until toothpick inserted in center comes out almost free of crumbs. Press mini marshmallows lightly in a single layer onto top. Put sheet back in oven and bake 3-5 minutes longer, or until
marshmallows are lightly tanned. Cool 10 minutes. Remove from sheet. Cool completely before cutting.
