Peach Butterscotch Meringue Pie

Today we made Peach Butterscotch Meringue Pie!

3/4C brown sugar, 1T cinnamon, 2T flour, 1/3C light corn syrup, 3T butter, melted, 1 1/2 extra large fresh peaches, peeled and sliced, 1 graham cracker pie shell

Meringue: 2 egg whites, 4T sugar

Preheat oven to 375F. In medium saucepan, mix brown sugar, flour and cinnamon.

Stir in corn syrup and butter until blended.

Bring to boil. Stir 2 minutes or until thickened.

Remove from heat. Quickly toss with peaches.

Turn into pie shell.

Bake 45 minutes or until almost set in center. Cool.

Meringue: Preheat oven to 400F. Whip whites until almost stiff.

Gradually beat in sugar until stiff. Spread on top of pie.

Bake 10 minutes or until lightly browned. Cool 20 minutes before cutting.

Apple Butterscotch Bars

Today I made Apple Butterscotch Bars!

2C brown sugar, 1C butter, melted, 2 eggs, 2C flour, 2t baking powder, 1/2t salt, 3 medium Granny Smith apples, peeled, cored and chopped into 1/2″ pieces

Preheat oven to 350F.

Sift dry ingredients. In separate bowl, stir brown sugar with eggs and melted butter.

Praline Butterscotch Bars

Today I made Praline Butterscotch Bars!

This recipe is from the book, “Still Life With Menu” by Mollie Katzen; published in 1988.

I made half the recipe.

1C butter, 3/4C packed brown sugar, 1C coarsely chopped pecans, 2 eggs, 1/2t vanilla, 1 1/2C flour, 2t baking powder, pinch salt

Preheat oven to 350F. Put 4T butter in a rectangular pan and melt in oven. Tilt the pan until evenly distributed. Sprinkle with 1/4C brown sugar and pecans. Set aside. Cream remaining 3/4C butter with 1/2C brown sugar. Add eggs. Stir in vanilla. Sift dry ingredients. Add to butter mixture. Mix well. Spoon over pecans. Gently spread with rubber spatula. Batter will not cover corners completely. Bake 15-20 minutes or until toothpick inserted in center comes out clean.

butter for greasing, 1C brown sugar, 2C stale bread cubes, 3C milk, 2 eggs, beaten, 1t vanilla, 1/4C butter

Preheat oven to 350F.

Spread brown sugar evenly into the bottom of a buttered casserole dish.

Mix beaten eggs with milk. Stir in vanilla. Sprinkle stale bread cubes onto brown sugar. Place pats of of butter on top of bread. Add milk/egg. Make sure all bread is wet with milk/egg. Bake 30 minutes or until set.

Butterscotch Pie

Today I made Butterscotch Pie (aka Butterscotch Meringue Pie)!

I omitted the meringue, but kept the eggs whole instead of separating them for the meringue. I also used skim milk and baked the pie at 350F instead of 300F.

This recipe is from a booklet published by Igleheart Brothers, Inc., 1928.

1/3C flour, 1C brown sugar, 3T butter, 1 1/2C milk, 2 eggs, 1t vanilla, 1 9″ pie shell

Preheat oven to 350F.

Butterscotch Pie

Prick pie shell with fork so that pie will not explode in oven. Bake empty pie shell 10 minutes. In bowl, mix flour and brown sugar. Blend in butter.

Add milk and cook until thick and smooth, stirring frequently. Cool 15 minutes. In bowl, beat eggs. Stir a few tablespoons of milk mixture into eggs. Blend well. Repeat once. Pour bowl mixture into saucepan. Add vanilla. Pour into pie shell. Bake 40-50 minutes or until set and golden brown. Chill 1 hour before serving.

Today I made Butterscotch Pudding!

3T cornstarch, 1 1/4C brown sugar, 2C milk, 1 egg, 1/3C butter

Mix cornstarch and brown sugar in heavy saucepan. Stir in milk.

Add egg. Beat well.

Cook over medium heat, stirring constantly until mixture thickens and bubbles, about 7 minutes. Reduce heat to low. Add butter.

Stir until smooth and of desired thickness.

Butterscotch Cookie Bars

Today I made Butterscotch Cookie Bars!

3 1/2oz butter, 3T sugar, 2oz cornmeal, 3oz flour, 4 1/2oz butter, 3oz brown sugar, 2T honey, 14oz sweetened condensed milk

Preheat oven to 350 F. To make the crust, cream butter and sugar until light and fluffy. Add cornmeal and flour. Knead briefly on lightly floured surface. Press crust into greased rectangular pan, any size. Bake 15-25 minutes or until very lightly browned. Cook butter, brown sugar and honey in saucepan over medium heat stirring constantly until boiling. Simmer 7 minutes. Add milk. Mix well. Pour over baked crust. Bake 15-25 minutes longer, or until set. Cool completely. Cut into bars.

1/2C butter, 1 1/2C brown sugar, 2 eggs, beaten, 2 1/2C flour, 1/2t baking powder, 1t baking soda, 1/2t salt, 1C sour cream

Cream butter, sugar and beaten eggs.

Mix dry ingredients. Add them alternately with sour cream.

Chill dough 2 hours. Preheat oven to 400. Drop by tsps onto greased cookie sheets.
