Today we made Dairy Nut Cake!

1/2C skim milk, 1/3C plain nonfat yogurt, 2T butter, melted, 1 3/4C flour, 1/2t baking soda, 1t baking powder, 1/2C brown sugar, 1 egg, 1C chocolate chips, 1/3C coarsely chopped pecans (1/2″ pieces), 1/3C coarsely chopped lightly salted almonds (3/4″ pieces), 1 1/2C dairy whipped topping

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, beat brown sugar with egg.

Stir in cooled, melted butter.

Stir in yogurt and milk. Blend well.

Mix in dry ingredients until almost blended.

Fold in chips and nuts until just blended.

Turn into greased 8″ or 9″ round cake pan.

Bake 30-35 minutes or until light golden. Cool completely. Spread dairy whipped topping on top of cake. Chill 10 minutes.

Brown Sugar Loaf

Today we made Brown Sugar Loaf with Strawberry Icing!

1C milk, 1C brown sugar, 4T butter, 3C flour, 1T cinnamon, 2t baking powder, 2 eggs, 1T almond extract

Icing: 4 1/4C powdered sugar, 16 oz fresh strawberries, rinsed, hulled and sliced

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, cream butter with brown sugar.

Stir in eggs.

Mix in extract. Blend well.

Add dry ingredients to wet alternately with milk, until just blended, beginning and ending with dry.

Turn into greased 11″X 13″ pan.

Bake 40 minutes or until lightly browned. Cool completely. For icing, push strawberries through fine mesh sieve.

Sift powdered sugar into puree. Stir until barely pourable.

Cut cake in half horizontally with serrated knife. Spread 2/3 of icing on one half, cut side up.

Apple Honey Nut Cake

Today we made Apple Honey Nut Cake!

14 oz sweetened condensed milk, 2 scant C flour, 3t baking powder, 1/2 C apple juice, 1/2C coarsely chopped peanuts, 1/2C coarsely chopped almonds lightly salted with sea salt, 1/2C honey

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix juice and honey.

Today we made Lemon Fruitcake!

3/4C water, 14 oz sweetened condensed milk, 2 scant C flour, 3t baking powder, 3T lemon juice, 1/2C brown sugar, 1/4C coarsely chopped walnuts, 1/2C coarsely chopped almonds lightly salted with sea salt, 1/2C coarsely chopped dried figs, 1/4C coarsely chopped prunes

Preheat oven to 350F. Heat water until warm. Stir into lemon juice and brown sugar.

Pour into bowl. In separate bowl, sift together dry ingredients. Stir sweetened condensed milk into juice mixture.

Today we made Blueberry Walnut Choc Chip Cake!

1C brown sugar, 4T butter, 2C flour, 1T cinnamon, 1T baking powder, 1/2t baking soda, 2 eggs, 16 oz well-drained blueberries, 1C coarsely chopped walnuts, 1C chocolate chips, 1T almond extract, 1/2C skim milk

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, cream butter with brown sugar.

Today we made Pineapple Oat Cake!

1/2C butter, 1/2C brown sugar, 1 egg, 1/2t vanilla, 1 1/2C quick oats, 1/4t baking soda, 1 1/4C flour, 1/4t salt

Filling: 20 oz can pineapple chunks in 100% juice, well drained; 1C sugar; 1/4C cornstarch; 1/4C flour; 1/3C pineapple juice; 4 eggs

Crust: Preheat oven to 350F. Sift together flour, soda and salt. Stir in oats.

Cocoa Fruitcake

Today we made Cocoa Fruitcake!

1/2C cocoa, 1C boiling water, 14 oz sweetened, condensed milk, 2 scant C flour, 3t baking powder, 1/4C coarsely chopped dried apricots, 1/4C coarsely chopped prunes, 1/3C chocolate chips

Preheat oven to 350F. Add boiling water to cocoa. Stir until dissolved. Cool 5 minutes.

1/4C coarsely chopped prunes, 1/4C coarsely chopped dried apricots, 1/4C coarsely chopped dried figs, 1/2C coarsely chopped almonds lightly salted with sea salt, 2 scant C flour, 3t baking powder, 14 oz sweetened condensed milk, 1C skim milk

Preheat oven to 350F. Sift together dry ingredients. In saucepan, heat skim milk until slightly warm.
