1/2C butter, 1C sugar, 1t vanilla, 2 eggs, 2 1/2C flour, 2t baking powder, 12 oz fresh blackberries

Preheat oven to 350F.

Mix in vanilla. Push blackberries through a fine-mesh sieve.

Turn into greased rectangular baking pan.

Today we made Chocolate Marshmallow Cake!

10T butter, 10T white sugar, 3 eggs, 1C powdered sugar, 1 1/8C flour, 1/3C cocoa, 6 oz marshmallows

Preheat oven to 325F. Cream buttter and white sugar.

Drunken Apple Cake

Today we made Drunken Apple Cake!

1/2C butter, 3/4C sugar, 2 eggs, 2 extra large apples, peeled, cored and shredded, 1 1/4C flour, 3/4t baking soda, 1 1/2C blackberry brandy

Place apples in shallow, wide ceramic or glass dish or bowl.

Soak covered in plastic wrap at least 3 hours, up to overnight.

1/2C butter, 1/4C cocoa, 1/4C sugar, 1/4C honey, 1/3C skim milk, 1 egg, 12 oz chocolate chips, 1C flour, 1/2t baking powder, 1/4t baking soda

Today we made Banana Blueberry Cake!

4C flour, 3t baking powder, 1/4t salt, 2/3C sugar, 2/3C chilled butter, 2 eggs, beaten, 2t vanilla, 1C nonfat yogurt

Topping: 3T brown sugar, 2C fresh blueberries, slightly mashed, 1 banana, mashed

Preheat oven to 375F.

Today I made Squash Loaf Cake!

2C flour, 3/4t baking soda, 1/2t baking powder, 1/2t salt, 1C baked, mashed butternut squash, 2T butter, melted, 1/4C reduced fat sour cream, 2 eggs, 1C brown sugar, 1T cinnamon

Topping: 1 1/2t cinnamon, 2T brown sugar, 1T butter, melted

Preheat oven to 350F.

2T butter, 4 oz slivered almonds, 1/2C sugar, 3 medium bananas, mashed,
8 oz chocolate-covered mints
(Junior Mints or coarsley chopped After Eight or chopped Andes Candies or chopped Peppermint Patties or the like),
2 eggs, 1 1/4C flour, 3/4t baking soda, 1/4t salt

Glaze: 6T cornstarch, 1/2C water, 2/3C sugar, 1/2C Grand Marnier

Carefully fold banana mixture into whites.

Turn into 2 greased 9″ round pans.

Bake 40 minutes or until lightly browned and toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan on separate plates.

Glaze: Constantly stir cornstarch, water and sugar over medium heat until thickened into a paste, about 10 minutes. Turn off heat.

Quickly add Grand Marnier, stirring vigorously until well blended.

Pour half of glaze on top of one cake.

Put second cake on top of first. Pour on remaining glaze. Slice cake. Serve warm.

Today I made Blubeberry Sour Cream Cake and Frosting!

3C fresh blueberries, 1C butter, 2 1/2C sugar, 4 eggs, 4C flour, 2t salt, 2t baking powder, 2t baking soda, 2C reduced-fat sour cream
Frosting: 6T blueberry puree, 6-7C powdered sugar, 6T reduced-fat sour cream

Preheat oven to 350F.
