Crust: 1/2C butter, 1/3C brown sugar, 1 1/8C flour

Filling: 1 egg, 1/3C sugar, 6 oz cream cheese, 1/2C coarsely chopped prunes

Preheat oven to 350F. Mix crust ingredients.

Press into greased 8-cup cake pan or muffin tin.

Bake 10-12 minutes or until lightly browned. Mix filling ingredients.

Pour into baked crusts.

Reduce oven heat to 300F. Bake 15-17 minutes longer or until set in center. Makes 5 cakes.

PB Chocolate Cheesecake

Today I made Peanut Butter Chocolate Cheesecake!

1/3C peanut butter, 3 eggs, 1t vanilla, 1/4t salt, 3T flour, 12 oz chips, 16 oz fat free cream cheese

Preheat oven to 350F.

Beat cream cheese and peanut butter.

Stir in vanilla and salt. Blend well.

Today I made Citrus Rum Banana Cheesecake!

8 oz fat-free cream cheese, 2 eggs, 1C brown sugar, 3T citrus rum, 3T cornstarch, 2 ripe medium bananas, mashed

Preheat oven to 350F.

Today I made Corn Cheesecake!

16 oz fat-free cream cheese, 4 eggs, separated, 1 1/4C sugar, 1T citrus rum, 2C corn kernels from freshly steamed medium cobs (about 5)

Preheat oven to 350F.

Stir in yolks. Blend well.

Stir in rum. Stir in corn.

In separate bowl, whip whites until soft peaks form.

Add sugar. Whip until stiff peaks form.

Fold into cheese batter.

Turn into greased tube pan.

Bake 40-45 minutes or until browned on top. Cool completely. Chill 1 hour. Remove from pan.

Mango Cheesecake

Today I made Mango Cheesecake!

8oz cream cheese, 1/2C sugar, 14oz fat-free sweetened condensed milk, 1 egg, 2 fresh mangoes, thinly sliced into sticks, 1T orange juice, 1 1/2C cake crumbs

Preheat oven to 350F. Spread cake crumbs evenly in bottom of greased 9″ round pan. In bowl, mix together cream cheese and sugar.

Pour on top of cake crumbs in pan.

Arrange mango slices on batter.

Bake 40 minutes or until lightly browned around edges and set in center.

Drunken-Cranberry Cheesecake

Today I made Drunken-Cranberry Cheesecake

16 oz fat-free cream cheese, 4 eggs, 1C sugar, 1/2C Triple Sec, 1C dried cranberries

Soak dried cranberries in Triple Sec for at least 2 hours.

Preheat oven to 350F.

Add eggs. Blend well. Drain cranberries well.

Reserve Triple Sec for a different recipe. Add cranberries to batter.

Bake 35-40 minutes or until set, and edges come away from pan. Cool completely before cutting.

Chiffon Cheesecake Lemon Bars

Today I made Chiffon Cheesecake Lemon Bars!

16 oz fat-free cream cheese, 2 egg whites, 1C sugar, 2 1/2C flour, 1t baking powder, 1C butter, 1/2C powdered sugar, 1/4t lemon zest, 3T lemon juice

Preheat oven to 350F.

Chiffon Lemon Bars

Beat cream cheese with 1/2C sugar. Blend well. In separate bowl, beat butter with powdered sugar. Blend well. Add lemon juice. Stir in zest. Add dry ingredients. Blend well. Press into ungreased 9″ X 13″ pan. Bake 7 minutes. Meanwhile, beat egg whites until foamy. Gradually beat in 1/2C sugar. Beat until stiff and glossy. Fold into cream cheese mixture. Spread evenly onto prebaked crust. Bake 25-30 minutes or until an off-white color and crust is lightly browned. Cool before cutting.
