12 oz fresh cherries, 1/2C sugar, 1C no-refined-sugar-added peach nectar, 1C water

Mix sugar and water over low heat until dissolved. Cool.

Pit cherries and puree in blender.

Mix in peach nectar.

Whisk in water mixture. Blend well.

Frozen Cherry Pistachio Pie

Today we made Frozen Cherry Pistachio Pie!

2C coarsely chopped pitted fresh cherries, 6 oz whole pistachios without shells, 1/2C water, 3T cornstarch, 1/2C sugar, 1 graham cracker pie shell

Over medium heat, mix together water, sugar and cornstarch in saucepan until the consistency of gelatin, stirring constantly about 10 minutes.

Today we made Cherry Choc Chip Muffins!

3t baking powder, 2C flour, 2 eggs, 21 oz cherry pie filling, 1C chocolate chips, 4T butter, melted; 1/4C skim milk

Preheat oven to 350F. Sift together dry ingredients. In separate bowl, beat eggs with pie filling.

Today we made Cherry Brownies!

1C chocolate chips, 4T butter, 1C brown sugar, 1/2C flour, 1/4t salt, 2C pitted halved fresh cherries, 2 eggs

Melt chocolate chips and butter, stirring until smooth.

Today we made Drunken Cherry Chip Almond Cake!

2C pitted halved fresh cherries, 1C amaretto liqueur, 1C chocolate chips, 2C flour, 1t baking powder, 1/2C butter, 1 1/2C sugar, 1/2C coarsely chopped almonds, 2 eggs

Preheat oven to 350F.

Soak cherries in amaretto liqueur 2 or more hours in a glass container covered with plastic wrap.

Cherry Vodka Chip Ice Cream

Today we made Cherry Vodka Chip Ice Cream!

3 egg yolks, 1C lowfat milk, 16 oz heavy cream, 1/2C sugar, 2C halved fresh cherries, 1t vanilla extract, 1/4t salt, 1C chocolate chips, 1 1/2C vodka

Place cherries in shallow dish. Soak in vodka, covered, at least 2 hours.

In saucepan, beat milk with yolks, salt and sugar over medium heat until just starting to boil, stirring constantly.

Cherry Rolls

Today I made Cherry Rolls!

1 envelope dry yeast, 1/4C water, 2/3C sugar, 3T butter, melted, 3 eggs, 4-5C flour, 1/2C powdered sugar, 2C pitted fresh cherries

Pour warm water (105 to 115 degrees Fahrenheit) on yeast in a large bowl. Stir until yeast is dissolved.

Add sugar.

Add 1C flour and melted butter.

Work in eggs, then add enough flour to form a dough.

Place in a greased bowl.

Turn over once. Cover with plastic wrap. Refrigerate overnight.

Punch down dough. Place on floured surface. Add more flour.

Knead a couple of minutes. Grab a handful of dough, and roll or stretch out into a 3″X2″ rectangle. Sprinkle on 1T powdered sugar.

Top with 1 heaping T cherries.

Roll up. Pinch to seal edges. Place on greased cookie sheet. Repeat with remaining dough. Cover with plastic wrap. Let rise 1 hour.

Today I made Cherry Crisp!

2C pitted halved fresh cherries, 2T cornstarch, 1/4C sugar, 1/4C water, 3/4C packed brown sugar, 1/2C uncooked quick-cooking or old-fashioned oats, 1/2C flour, 3T butter

Preheat oven to 350F.

Stir cornstarch, sugar, water and cherries constantly over medium heat until thickened, about 8 minutes. Remove from heat.
