Mini-Chip Scones

Today I made Mini-Chip Scones!

3C flour, 1C sugar, 4t baking powder, 1/2t salt, 1/2C cold butter, 1C mini chocolate chips, 4T pineapple or orange juice, 1C milk

Preheat oven to 350F.

Mini-Chip Scones

Mix dry ingredients including sugar. Cut in butter with fork.

In separate bowl, mix juice and milk.

Pour over dry ingredients. Toss gently with fork until dough is formed.

Work in chips.

Turn into greased, lined or nonstick muffin tin.

Bake 20 minutes or until lightly browned. Do not overbake.

Chocolate Peppermint Bread

Today I made Chocolate Peppermint Bread!

1C skim milk, 4T butter, 1/2C white granulated sugar, 1 envelope yeast, 1/4 C water, 5-6C flour, 2 eggs, 8 oz fat-free cream cheese, 6 oz chocolate chips (mini or regular size), 3T powdered sugar, 3T skim milk, 1T peppermint extract

Pour warm water (105 to 115 degrees Fahrenheit) on yeast.

Stir until yeast is dissolved. Stir in 1C flour.

Mix in white granulated sugar.

Mix in milk.

Add more flour.

Work in butter. Chop into small chunks, which need not be fully blended in.

Work in eggs.

Stir in cream cheese.

Add enough flour to form a dough that is elastic and still a little tacky. Place in greased bowl. Cover bowl with plastic wrap and chill overnight. Punch down dough, knead two minutes or until smooth, adding more flour if necessary. On large, flat surface, stretch dough into one or two large rectangles (for one or two loaves). In saucepan, melt chocolate chips with powdered sugar over low heat, stirring constantly.

Add peppermint extract. Blend well.

Add milk and stir until smooth. Remove from heat. Spread evenly on dough rectangles. Roll up.

Place on greased cookie sheet.

Let rise 1 1/2 hours. Preheat oven to 350F.

Bake loaf or loaves 20-30 minutes or until browned.

Cool before slicing.

Cranberry Chocolate Chip Cake

Today I made Cranberry Chocolate Chip Cake!

6C flour, 2t baking soda, 2t baking powder, 2t salt, 4 eggs, 2C sugar, 1/2C butter, melted and cooled, 2 1/2 C milk, 2 1/2C raw cranberries, halved, 12 oz mini chocolate chips

Preheat oven to 350F.

Beat eggs with sugar. Stir in melted butter. Stir in milk. Sift together dry ingredients. Mix into wet until just blended. Fold in cranberries.

Fold in mini chocolate chips.

Turn batter evenly into 2 greased loaf pans. Bake 55 to 60 minutes or until knife inserted in center comes out clean. Cool completely before cutting.

Schnapps Chocolate Cake

Today I made Schnapps Chocolate Cake!

This recipe is from the book, ‚ÄúCelebrate With Chocolate” by Marcel Desaulniers, published in 2002. I made one large cake instead of small cakes.

2oz butter, 3/4C flour, 4oz chocolate chips, 1/4C cocoa, 1t baking powder, 1/4t salt, 1/2C sugar, 3 eggs, 1t peppermint schnapps

Preheat oven to 350F. Melt chocolate and butter. In separate bowl, sift dry ingredients, including cocoa. In separate bowl, beat eggs and sugar until almost ribbony. Add butter mixture. Beat in dry ingredients. Add schnapps. Blend well. Turn into greased and floured extra large muffin tin (or a greased 9″ round cake pan– prolong baking time accordingly) and spread evenly. Bake 15-30 minutes or until a toothpick inserted in center of cake comes out clean.

Today I made Chocolate Chip Cheesecake!

1C coarse chocolate cookie crumbs, 1/2C plus 1/2T sugar, 1 1/2T butter, melted, 8oz fat-free cream cheese, 2 eggs, 1t vanilla, 3/4C mini chocolate chips

Preheat oven to 325F.

Mix cookie crumbs, sugar, and butter until blended. Press into the bottom of a greased 9″ springform pan. Cream sugar and cream cheese. Blend well. Beat in eggs. Blend well. Beat in vanilla. Blend well. Pour batter evenly onto crust.

Sprinkle chips on top. Bake 60-70 minutes or until toothpick comes out clean. Cool, then chill 2 hours before serving.

Sour Cream Cherry Chip Cookies

Today I made Sour Cream Cherry Chip Cookies!

3/4 cup butter, 3 eggs, 2/3 cup sugar, 5 1/4 cups flour, 3/4 tsp salt, 3/4 tsp baking soda, 1 TBS (yes) baking powder, 1 1/2 cup sour cream, 2/3 cup mini chocolate chips, 1-16 oz can pitted sweet cherries, drained

Preheat oven to 375F.

Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well.

Sift together dry ingredients. Set aside.

Chop cherries and run through sieve.

Add dry ingredients to egg mixture, alternating with sour cream, one cup at a time. Stir in chips and cherries.

Drop by tbs onto greased cookie sheets.

Bake 12-15 minutes, or until bottoms are lightly browned. Cool on racks. Eat.
