Peanut Butter Pecan Chocolate Chunk Cookies

Today I made Peanut Butter Pecan Chocolate Chunk Cookies!

1/2C butter, ¼t salt, 1/2C crunchy peanut butter, 3/4C sugar, 3/4C dark brown sugar, 2 eggs, 1C flour, ¼t baking soda, 1C chopped pecans, 12 oz semisweet chocolate chunks

Preheat oven to 350F.

Sift together dry ingredients. In separate bowl, cream peanut butter and butter with sugars. Add eggs. Add dry ingredients. Add vanilla. Add chocolate chunks. Drop by Tbs onto parchment-paper lined cookie sheets. Bake 8-10 minutes or until lightly browned.

Cherry Chocolate Clafouti

Today we made Cherry Chocolate Clafouti!

3C fresh halved cherries, frozen and thawed, 1/2C plus 1 1/2T sugar, 1C flour, 1/2t baking soda, 1/4t salt, 1/4C butter, 1 egg, 1t vanilla, 1/4C milk, 1/4C plain lowfat yogurt, 2C chocolate chunks

Preheat oven to 375F. Spread cherries evenly in greased 9″X13″ baking dish. Sprinkle 1 1/2T sugar evenly on top. Sprinkle chocolate chunks on evenly. Set aside. In a bowl, mix together the dry ingredients. In separate bowl, cream together butter and 1/2C sugar. Add egg. Add vanilla. Blend well. Add dry ingredients alternately with milk and yogurt, starting and ending with dry. Blend well. Pour over chocolate/cherry mixture, which will thinly coat when spread evenly. Bake 35-40 minutes or until toothpick comes out clean.

Today I made Peanut Surprise Cookies!

1/2C butter, 3/4C brown sugar, 2T brown sugar, 1 egg, 1t vanilla, 1t cream of tartar, 1/2t soda, 1/8t salt, 1 1/3C flour, 6oz chocolate chunks, 1t cinnamon, 1/2C coarsely chopped peanuts

Preheat oven to 400F. Beat butter with 3/4C brown sugar.

Stir in egg and vanilla. Blend well.

In separate bowl, mix dry ingredients. Add to wet ingredients. Blend well. Stir in chocolate chunks and peanuts.

In separate container, mix 2T brown sugar with cinnamon.

Shape batter into balls and roll in sugar/cinnamon.

Place 2″ apart on parchment-paper lined cookie sheets or food-grade silicone-reinforced glass-weave mat.

Bake 8-10 minutes or until firm. Do not overbake. Cool on racks.

Orange Chocolate Chunk Cookies

Today I made Orange Chocolate Chunk Cookies!

2 1/4C flour, 1/2t baking powder, 1/2t salt, 1C butter, 3/4C sugar, 1 egg, 1T orange zest, 1t vanilla, 1/2C orange juice, 6oz chocolate chunks

Preheat oven to 350F.

Sift dry ingredients. In separate bowl, cream butter and sugar until light and fluffy. Add egg. Blend well.

Add zest. Blend well.

Add vanilla. Blend well. Stir in juice. Blend well. Beat in dry ingredients. Blend well. Stir in chocolate chunks.

Drop by Tbs onto a food-grade silicon-reinforced glass-weave mat
or greased cookie sheets, 2″ apart. Bake 15-17 minutes or until browned and set in the middle. Cool 5 minutes on sheets, then remove to rack to cool completely.

Chocolate Raisin Bars

Today I made Chocolate Raisin Bars!

2C flour, 2 1/2C brown sugar, 1C butter, 1t salt, 4 eggs, 4T flour, 2t vanilla, 1t baking powder, 1/2t ginger, 1t cinnamon, 1C coarsely chopped pecans or cashews, 12oz chocolate chunks or Mini-Kisses, 1C raisins

Preheat oven to 325F. Cream 1/2C brown sugar with butter and 1/2t salt. Mix in 2C flour. Blend well. Spread mixture into 13″X9″ baking dish (glass or metal). Bake 15 minutes, or until golden brown. Beat eggs with remaining brown sugar. Sift in 4T flour and remaining dry ingredients, including 1/2t salt. Add vanilla. Stir in nuts.

Stir in chocolate. Stir in raisins. Blend well. Spread onto baked crust. Bake 20-25 minutes or until well browned. Cool. Cut into bars.

Lemon Chocolate Chunk Cake With Lemon Glaze

Today I made Lemon Chocolate Chunk Cake With Lemon Glaze!

1C butter, 1 1/2C sugar, 1/3C lemon juice, 5 eggs, 3C flour, 2t baking powder, 1/2t salt, 2/3C milk, 12oz chocolate chunks

Glaze: juice of 1/2 a large lemon, 1T water, 1 1/2-2C powdered sugar

Preheat oven to 350.

Cream butter with sugar.

Add lemon juice and eggs, one at a time.

Mix all dry ingredients and add to cream mixture with milk. Add chocolate chunks.

Spread into greased bundt or tube pan.

Bake 50-60 minutes or until toothpick comes out clean. Cool.

Mix glaze ingredients until thick and barely pourable.

Pour onto cake.

Chill 10 minutes.

Chocolate Oat Toffee Pieces

Today I made Chocolate Oat Toffee Pieces!

4 1/2C quick oats, 1C brown sugar, 3/4C butter, melted, 1/2C corn syrup, 1/2t salt, 12 oz chocolate chunks or chips

Preheat oven to 400F. Mix all ingredients except for chocolate chunks or chips.

Press firmly into greased jelly roll pan. Bake 18 minutes or until lightly browned. Remove from oven and sprinkle evenly with chocolate chunks or chips. Let stand for 10 minutes.

Spread chocolate over toffee.

Cool completely. Break into pieces.

Mocha Chocolate Chunk Cake

Today I made Mocha Chocolate Chunk Cake!

8 oz butter, 6 oz unsweetened chocolate, 2C sugar, 4 eggs, 1T instant coffee powder, 1C self-rising flour, 12 oz chocolate chunks

Preheat oven to 325F. Melt butter and chocolate in large saucepan.

Remove from heat and add sugar. Stir well.

Mix in eggs, one at a time. Blend well.

Stir in dry ingredients. Stir well. Add chocolate chunks. Blend well. Bake in 9″X13″ pan 40 minutes or until toothpick inserted comes out almost clean. DO NOT OVERBAKE. Cool completely before cutting.

Chill one hour before serving.

Coffee Fruitcake

Today I made Coffee Fruitcake!

1lb citron or other dried or candied fruit, such as cranberries, pineapple, raisins, or cherries; 1C brewed black coffee, 2C self-rising flour, 14oz sweetened condensed milk, 12oz chocolate chunks

Preheat oven to 375F.

Soak fruit in coffee for two hours or more.

Bake in two greased loaf pans for 55-60 minutes, or until toothpick comes out clean. Do not burn.
