Today we made Pear Peanut Butter Cookie Bars!

2 1/2C flour, 2t baking powder, 1/2t salt, 1/2c creamy peanut butter, 1C chocolate chips, 1/4C honey, 2 large pears, peeled, cored and chopped into 1/2″ pieces, 1T cinnamon, 1/2C plain nonfat yogurt

Preheat oven to 350F. Sift flour, baking powder, salt, and cinnamon. In separate bowl, beat yogurt, honey and eggs.

In separate bowl, beat peanut butter and brown sugar.

Add egg mixture to it.

Make a well in the dry ingredients. Stir in wet until almost blended.

Stir in chocolate chips and pears.

Spread evenly into greased 9″X13″ pan.

Apple Nut Granola Bars

Today we made Apple Nut Granola Bars!

1 1/2C brown sugar, 1C flour, 1T cinnamon, 2 eggs, 5T butter, melted and cooled; 1C chocolate chips, 1C of coarsely chopped, walnuts / cashews / almonds / peanuts, 1C apple chopped into 1/4″ pieces, 2C quick oats, 1T almond extract

Preheat oven to 350F. Sift together flour and cinnamon. Stir in brown sugar and oats.

Chocolate Caramel Nut Bars

Today we made Chocolate Caramel Nut Bars!

Crust: 1/2C butter, 1/2C sugar, 1 egg, 1 1/4C flour

Filling: 1/2C butter, 2/3C brown sugar, 1/4C light corn syrup, 3/4C coarsely chopped, roasted, salted almonds; 3/4C coarsely chopped walnuts, 1C chocolate chips

Preheat oven to 350F. For crust: Beat butter with sugar.

Work in egg and flour.

Press into greased, square pan. Bake 15 minutes. For filling: In saucepan, mix butter, brown sugar and corn syrup over medium heat, stirring frequently.

Boil 2 minutes without stirring.

Quickly stir in almonds and walnuts.

Spread over baked crust.

Bake 20 minutes or until brown and bubbling. Immediately spread on chocolate chips evenly. Gently press down. Loosen edges of bars with serrated knife. Cool.

Chill until of desired consistency. Cut into bars.

Chocolate Strawberry Bars

Today we made Chocolate Strawberry Cookie Bars!

2 1/4C flour, 1t baking powder, 6T butter, 1/2C powdered sugar, 2C chocolate chips. 6T strawberry puree, 5T flour, 1t baking powder, 3T powdered sugar

Preheat oven to 350F.

Mix first 2 ingredients with butter.

2C brown sugar, 1C butter, melted, 2 eggs, 2C flour, 2t baking powder, 1/2t salt, 3 medium Granny Smith apples, peeled, cored and chopped into 1/2″ pieces

Today I made Lemon Vodka Oat Bars!

1 1/4 C flour, 1t baking powder, 1/2t salt, 1/2C butter, 1C sugar, 2 eggs, 2C oats

Filling: 1 1/2 C sugar, 1/4C cornstarch, 1/4C flour, 1/4C citrus vodka, juice of 2 lemons, 4 eggs

Preheat oven to 350F.

Bake 30 minutes or until set. Cool 10 minutes. Serve warm.

Apple Raisin Oat Bars

Today I made Apple Raisin Oat Bars!

1/2C butter, 1C brown sugar, 2 eggs, 1/2t vanilla, 3/4C quick oats, 1C flour, 1/2t baking soda, 1/2t cinnamon, 1/4t salt, 2 apples, peeled, cored and diced into 1/2″ pieces, 1C raisins

Preheat oven to 350F. Beat butter with brown sugar. Add eggs. Blend well. Add vanilla. Blend well. In separate bowl, sift together flour, soda, cinnamon and salt. Stir dry ingredients into wet. Stir in oats. Add apples. Blend well. Add raisins. Blend well. Turn into greased 9″ X 13″ rectangular pan. Bake 25-30 minutes or until lightly browned and bars come away from the edge of the pan. Cool before cutting.

Chocolate Peanut Butter Oatmeal Bars

Today I made Chocolate Peanut Butter Oatmeal Bars!

Crust: 1C butter, 1 1/3C firmly packed brown sugar, 3/4C light corn syrup,
5 1/3C quick oats, 2t vanilla extract

Topping: 1/4C unsweetened cocoa, 1/3C crunchy peanut butter, 14 oz fat-free sweetened condensed milk

The recipe for the crust is from the book “Growing Up on the Chocolate Diet” by Lora Brody, 1990. I halved the crust recipe.

Preheat oven to 350F. Cream butter and brown sugar. Mix in the next 3 ingredients. Spread in greased rectangular pan. Bake 16 minutes. Cool. Meanwhile, heat sweetened condensed milk with cocoa, stirring constantly until cocoa dissolves. Remove from heat. Stir in peanut butter. Blend well. Spread on top of cooled crust. Cool. Freeze 2 hours. Thaw 10 minutes. Cut into bars.

Chiffon Cheesecake Lemon Bars

Today I made Chiffon Cheesecake Lemon Bars!

16 oz fat-free cream cheese, 2 egg whites, 1C sugar, 2 1/2C flour, 1t baking powder, 1C butter, 1/2C powdered sugar, 1/4t lemon zest, 3T lemon juice

Preheat oven to 350F.

Chiffon Lemon Bars

Beat cream cheese with 1/2C sugar. Blend well. In separate bowl, beat butter with powdered sugar. Blend well. Add lemon juice. Stir in zest. Add dry ingredients. Blend well. Press into ungreased 9″ X 13″ pan. Bake 7 minutes. Meanwhile, beat egg whites until foamy. Gradually beat in 1/2C sugar. Beat until stiff and glossy. Fold into cream cheese mixture. Spread evenly onto prebaked crust. Bake 25-30 minutes or until an off-white color and crust is lightly browned. Cool before cutting.
