Today we made Apple Oatmeal Cookies!

1/2C butter, 1/2C brown sugar, 1/4C honey, 2 eggs, 1/2t baking powder, 1 1/2C flour, 1t almond extract, 1C quick oats, 2 extra large Granny Smith apples, peeled and diced into 1/4″ pieces (about 2C)

Preheat oven to 350F.

Honey Chocolate Chip Cookies

Today we made Honey Chocolate Chip Cookies!

1/2C honey, 1/2C butter, 1 egg, 1/2t vanilla, 1C flour, 1/2C rolled oats, 1/2t baking soda, 2T brown sugar, 2/3C chocolate chips, 2/3C salted peanuts

Preheat oven to 325F. Beat honey and butter until creamy but not fluffy.

Beat in egg and vanilla.

In separate bowl, mix dry ingredients. Stir into wet.

Chill one half hour. Drop by Tbs onto greased cookie sheet.

Chocolate Rugelach

Today we made Chocolate Rugelach!

1C butter, 8 oz cream cheese, 2C flour, 3T sugar, 1/4t salt, 1t vanilla, 12 oz chocolate chips, melted; 1/2C walnuts, coarsely chopped

Stir together flour, sugar and salt.

Cut in butter and cream cheese.

The dough will get crumbly and then get sticky. Knead until just combined. Shape into a large rectangle. Wrap in plastic wrap and chill for at least 2 hours or up to 1 week.

Preheat the oven to 350°F.

Divide dough in half. Put the second half back in the fridge. Melt chocolate.

Roll out about 2T of the first half of the dough on a floured surface. Spread chocolate on top. Sprinkle on a few walnut pieces.

Roll up.

(Or– with a serrated knife, cut out a triangle 1″ X 2″ about 1/2″ high, and spread chocolate on top. Sprinkle on walnuts. Roll up.) Repeat with the rest of the dough. Place on greased cookie sheet.

Repeat with second half of dough. Bake 15-20 minutes or until lightly browned.

Gingerbread Biscotti

Today we made Gingerbread Biscotti!

3T butter, 1C brown sugar, 3 eggs, 3C flour, 1/4C molasses, 1T baking powder, 1 1/2T ground ginger, 1/2t cinnamon, 1/2t ground cloves, 1/4t ground nutmeg

Preheat oven to 350F.

Stir in molasses.

Bake 25 minutes or until firm and lightly browned. Slice into long sticks.

Squash Biscotti

Today we made Squash Biscotti!

4T butter, 3/4C brown sugar, 2 eggs, 1C baked, seeded and mashed acorn squash, 2 1/2C flour, 1t baking powder, 1T cinnamon, 1T almond extract

Preheat oven to 350F.

In separate bowl, sift together dry ingredients. Make a well in the dry ingredients. Stir in the wet until just blended.

Shape dough into a log about 6″ long.

Bake 30 minutes on greased cookie sheet. Reduce oven to 325F. Slice loaf into long, thin strips.

Bake an additional 40-50 minutes or until dry and crunchy.

Chocolate Peanut Butter Cookies

Today we made Chocolate Peanut Butter Cookies!

1/4C flour, 1/3C unsweetened cocoa powder, 1/2t salt, 1/4t baking powder, 12 oz chocolate chips, 1/3C creamy peanut butter, 1/2C sugar, 1t vanilla extract, 2 eggs

Sift together dry ingredients. In large saucepan, melt ONLY 6 ounces (1C) of the chocolate chips, and peanut butter. Stir until smooth.

Stir in sugar. Cool 20 minutes.

Today we made Preserves Sandwich Cookies!

1C butter, softened, 1C sugar, 1 egg, 2 1/2C flour, 1t baking powder, 2T orange juice, 1t vanilla, fruit preserves, powdered sugar

Beat together butter, sugar and egg.

Preheat oven to 400F. Divide dough in 2. Roll out one half on lightly floured surface to 1/4″ thick.

Use cookie cutters or rim of a drinking glass to shape cookies. Place on lightly greased sheets.

Bake 8-10 minutes or until lightly browned. Spread fruit preserves on half the cookies and cover with the other half.

Today we made Brownie Wafers!

Please note: Since this recipe is flourless and given the ingredients, it will be crunchy.

Spread on greased jelly roll pan. The batter does not have to fill it up entirely, as it will spread out while baking. Or spoon into a candy mold or spoon into lined cupcake tins– to be used as the base for mini-cheesecakes or other items.

Bake 12 minutes or until edges move slightly away from pan surface.

Cool 10 minutes before removing from pan. Break into pieces.

4T butter, 1/2C brown sugar, 2 eggs, 15 oz pumpkin puree, 3C flour, 1t baking powder, 1T cinnamon, 1t vanilla extract
