Today I made Chocolate Honey Cookies!
1C butter, 3/4C cocoa powder, 2 1/4 C sugar, 1t baking soda, 2 eggs, 1/2t salt, 2C flour, 1 oz unsweetened chocolate, melted, 1/4C honey
Preheat oven to 350F.
Cream butter with sugar. Add eggs. Blend well.
Stir in melted chocolate.
In separate bowl, mix dry ingredients.
Pour into creamed mixture alternately with honey. Blend well.
Drop by teaspons onto greased cookie sheets.
Bake 10 minutes or until edges of cookies pull away from cookie sheet. Do not burn. Change the lighting before serving.
Today I made Chocolate Oatmeal Mint Cookies!
42 oz sweetened condensed milk, 6 oz unsweetened chocolate, 2T mint extract, 3C oatmeal
Preheat oven to 350. Heat chocolate and milk until mixture no longer runs together when a finger is run along the back of the spoon, 12-15 minutes. Remove from heat. Stir in extract. Add oats and blend well. Drop by Tbs onto greased cookie sheets. Bake 12-15 minutes, or until firm. Remove from sheets immediately.
Today I made Meringue Cookies!
4 egg whites, 1 1/2C sugar, 2 pinches salt, 1 tsp cream of tartar, 12 oz mini chocolate chips
Preheat oven to 275F. Beat whites with salt until frothy.
Add cream of tartar and beat until soft peaks form.
Beat in sugar 2T at a time. Continue beating until whites are glossy and stiff, about 10 minutes.
Fold in chips. Drop onto well-greased cookie sheets, 2T at a time.
Bake 45-50 minutes, or until firm and dry on the inside.
Today I made Lemon Cookies!
1/2C butter, 1C sugar, 1 egg, 2T lemon juice, 2t lemon zest. 2C flour, 1t baking powder, 1/8t salt
[I tripled the recipe.]
Grease cookie sheets.
Beat butter and sugar till well blended. Add egg, juice and zest. Blend well.
In separate bowl, mix dry ingredients. Add to butter mixture. Blend well. Shape dough into 2 logs, each 1 1/2″ in diameter and 6 1/2″ long. Wrap each in plastic. Chill 2-3 hours or more. Preheat oven to 350F. Cut logs into 1/4″ thick slices. Place 1″ apart on sheet. Bake 15 minutes or until edges are light brown. Cool on wire rack. Store airtight.
Today I made Peanut Butter Chocolate Chip Snickerdoodles!
1C butter, 1C crunchy peanut butter, 2 eggs, 4C flour, 2t baking powder, 1t salt, 1C packed brown sugar, 1C sugar, 2C chocolate chips, 1t cinnamon
Preheat oven to 325F. Cream butter with peanut butter.
Save 4T sugar for rolling. Blend in sugars. Then eggs.
In separate bowl, mix dry ingredients except for cinnamon. Add to butter mixture.
Stir in chocolate chips. Roll dough into walnut-sized balls. Mix 4T sugar and cinnamon. Roll balls in mixture.
Bake for 15-17 minutes. Cool completely before removing from sheets.
