Today we made Cran Carrot Choc Chip Rolls!

1 envelope dry yeast, 1/4C warm water, 1/2C sugar, 12T butter, melted, 4 eggs, 1C skim milk, 5-6C flour

Filling: 4 oz baby carrots, chopped into 1/2″ pieces, 1C chocolate chips, 4 oz fresh raw cranberries, quartered

Pour warm water (105 to 115 degrees Fahrenheit) on yeast in a large bowl. Stir until yeast is dissolved.

Work in eggs, then add enough flour to form a dough.

Place in a greased receptacle that is double in area, the size of the dough.

Turn over once. Cover with plastic wrap. Refrigerate overnight. Punch down dough. Place on floured surface. Add more flour. Knead a couple of minutes. Grab a handful of dough, and roll or stretch out into an approximately 3″X2″ shell. Place a few carrot and cranberry pieces, and chocolate chips on the dough.

Roll it up and seal the edges.

Place on greased cookie sheet. Repeat with remaining dough. Cover with plastic wrap. Let rise 1 hour. Preheat oven to 350F.

Remove plastic wrap. Bake 10-12 minutes or until golden brown.

Today we made Cranberry Muffins!

2C flour, 1/2C sugar, 3t baking powder, 1/2t salt, 2 eggs, 3/4C skim milk, 1/4C butter, melted; 1C halved, fresh, raw cranberries

Preheat oven to 400F. Sift dry ingredients including sugar. In separate bowl, stir eggs with milk.

Make a well in the dry ingredients. Quickly stir in wet until just blended.

Apple Cranberry Cookies

Today we made Apple Cranberry Cookies!

3/4C milk, 10 oz fresh, raw cranberries, coarsely chopped; 1 2/3C flour, 1/2 t salt, 3/4C brown sugar, 1 1/2t baking powder, 1T cinnamon, 2 small apples, peeled and chopped into 1/2″ pieces

Preheat oven to 375F. Stir dry ingredients.

Today we made Cranberry Walnut Bread!

2C flour, 1C sugar, 1 1/2t baking powder, 1/2t baking soda, 1/2t salt, 1C coarsely chopped walnuts, 1C halved fresh cranberries, 3/4C orange juice, 2T butter, melted, 1 egg

Preheat oven to 350F.

Melon Cranberry Sorbet

Today we made Melon Cranberry Sorbet!

1C chopped melon– any with pale orange flesh (cantaloupe, muskmelon, etc.), 1/3C sugar, 6 oz dried cranberries, 1/2C vodka

Soak cranberries in vodka 2 or more hours. Drain and reserve vodka for another recipe.

Today I made Cranberry Marshmallow Ice Milk!

14 oz sweetened condensed milk, 2C skim milk, 10 oz fresh cranberries, 10 oz mini marshmallows, 1/3C Grand Marnier

Steam cranberries over boiling water until tender, about 5 minutes.

Sprinkle over marshmallows in glass casserole dish; some marshmallows will melt.

Pour Grand Marnier over mixture. Cover with plastic wrap and let soak 2 or more hours.

Transfer to a bowl. Add condensed milk.

2 1/2C flour, 2C oatmeal, 1 1/4C sugar, 1t salt, 1t baking powder, 1/2t baking soda, 1 egg, 7T cold butter, 1/2C pineapple juice, 10 oz fresh raw cranberries, halved

Preheat oven to 400F. Mix dry ingredients.

9T butter, 1C brown sugar, 2 eggs, lightly beaten, 1 3/4C flour, 1t baking powder, 1t vanilla extract, 1C cranberries, coarsely chopped, 2C chocolate chips

Preheat oven to 350F.

Today I made Cran Raisin Carrot Bread!

1/4C warm water, 1/4 oz (1 envelope) dry yeast, 1/2C skim milk, 1 egg, 4T butter, 3-4C flour, enough baby carrots chopped in 1/2″ pieces to make 1/4C, 4 oz dried cranberries, 4 oz dark raisins, 1/4C brown sugar, 1t cinnamon

Place yeast in bowl. Pour warm (105 degrees F – 115 degrees F) water over yeast.

Stir to dissolve. Wait a couple of minutes. Mixture should look murky. Add 1C flour.

Stir in egg.

Break up the butter into small pieces. Work into batter.

Add enough flour to form dough into an elastic ball that is still slightly sticky.

Place in a greased bowl. Turn ball over once. Cover bowl with plastic wrap and refrigerate overnight. Remove from fridge. Let stand 20 minutes to soften.

Preheat oven to 350F.

Punch down dough. Knead five minutes. Roll out on a flat surface that has been sprinkled with brown sugar.

Work in carrots, raisins and cranberries. Roll up the dough to shape into a loaf.

1/4 oz dry yeast (1 envelope), 1 egg, 4-5C flour, 1/4C warm water, 6T butter, softened, 6T nonfat plain yogurt, 2C whole, fresh cranberries, 1-2C powdered sugar

Pour warm water (105 to 115 degrees Fahrenheit) on yeast.

Stir until yeast is dissolved. Stir in 2C flour.

Stir in egg. Blend well. Stir in yogurt.

Stir in 1C flour. Stir in butter in small chunks, which need not be fully blended in.

Add enough flour to form a dough that is elastic and still a little tacky.

Place in greased bowl. Cover bowl with plastic wrap and chill overnight. Punch down dough, knead two minutes or until smooth, adding more flour if necessary. Roll out into two rectangles. Spoon powdered sugar into center of each.

Place cranberries on top. Press in lightly.

Roll up and put sealed side down on greased cookie sheet.

Prick with fork if there are no gaps in dough. Cover with plastic wrap and let rise for 1 hour. Remove wrap. Preheat oven to 375F.
