Today we made Prune Custard Strawberry Pie!

14 oz sweetened condensed milk, 1/2C skim milk, 3 eggs, 1/3C coarsely chopped prunes, 1/4C coarsely chopped almonds, 2T cornstarch, 1 deep dish graham cracker pie shell

Topping: 1/4C powdered sugar, 12 oz fresh strawberries

Preheat oven to 350F. Whisk eggs.

Stir in sweetened condensed milk.

Stir in skim milk. Blend well.

Stir in cornstarch. Blend well.

Pour into pie shell. Batter will be thin.

Bake 45 minutes or until center is set. Cool 30 minutes. Sift powdered sugar evenly onto pie.

Hull Strawberries and slice into heart shapes. Arrange on top of pie.

Today we made Banana Custard Pie!

3 eggs, 14 oz sweetened, condensed milk, 1/3C skim milk, 2 small bananas, 1 graham cracker pie shell

Preheat oven to 350F.

Preheat oven to 350F.

2 eggs, 14 oz sweetened condensed milk, 1 1/2C steamed, mashed acorn squash, 1T cinnamon, 3T flour, 1/4C skim milk, 1 graham cracker pie shell

Preheat oven to 325. Beat sweetened condensed milk with eggs.

Preheat oven to 350F.

Batter will be thin and spill easily. Put a baking sheet under the pie shell. Pour batter into pie shell.

Slice apples into crescents 1/8″ high and arrange in a circle in batter. Slices will rise when baking.

Pumpkin Sour Cream Custard Cake

Today I made Pumpkin Sour Cream Custard Cake!

Cake: 1 1/2C sugar, 2C flour, 1t baking powder, 1/2C butter, melted, 3 eggs, 1/2t salt, 1/2C skim milk Custard: 1 egg, 1C sugar, 2C canned mashed pumpkin, 1 1/4C fat free sour cream

Preheat oven to 350F.

Sift together dry ingredients, except for sugar. In separate bowl, mix 2 eggs with 1 1/2C sugar until pale and thick.

In separate bowl, mix 1 egg with 1C sugar. Stir in pumpkin.

Stir in sour cream. Blend well.

Spread on batter in pan.

Pour on remaining batter. There will be a lot more custard than cake batter.

Add remaining custard. Swirl with knife a few strokes. Bake 50-60 minutes or until toothpick inserted in center of cake comes out clean.

Pineapple Custard Pie

Today I made Pineapple Custard Pie!

1 graham cracker pie shell, 2 eggs, 1/2C pineapple juice, 14oz fat free sweetened condensed milk, 2T skim milk, 1/2t vanilla extract, 4T flour, 20oz canned, sliced pineapple in juice (not syrup)

Preheat oven to 350.

Mango Custard Pie

Today I made Mango Custard Pie!

1 large or 2 small mangoes, peeled and chopped into 1/2″ chunks, 1 graham cracker pie shell, 1 1/2C skim milk, 1/4C cornstarch for thick custard (or 3T cornstarch for somewhat thinner custard), 1/2C sugar, 2 eggs, slightly beaten

Preheat oven to 350F.

Stir together cornstarch and sugar in saucepan.

Mix in milk.

Stir constantly over medium heat until thick, and running a finger over the back of the mixing spoon leaves a permanent streak.

Reduce heat to low. Stir in eggs.

Cook 5 more minutes, stirring vigorously. Remove from heat. Arrange mango chunks in bottom of pie shell.

Today I made Pear Custard Tart!

Crust: 1/2C butter, 1/2C brown sugar, 1 1/4 – 1 3/4C flour

Please note: the following amounts make 1 tart plus 4 servings of additional custard.

Custard: 14 oz fat-free sweetened condensed milk, 2 large pears, peeled, cored and chopped, 1C fat-free sour cream, 2 eggs

Add enough flour to make a dough that is flexible but not crumbly or greasy.

Caramel Custard Pie

Today I made Caramel Custard Pie!

3/4C sugar, 3T water, 1/2C sugar, 2T cornstarch, 1/4t salt, 3 1/2C milk, 1C heavy cream, 1t lemon zest, 2 eggs, lightly beaten, 1 unbaked pie shell

Boil the 3/4 sugar and 3T water in heavy saucepan until very pale amber, about 8-10 minutes. Do NOT stir. Remove from heat immediately.

Pour into pie shell. Mixture will solidify quickly in clumps. Do NOT stir.

[The saucepan can be cleaned easily with a short soak in water.

Stir milk, cream, sugar, cornstarch and salt over medium heat until lightly boiling and slightly thickened.

Stir in zest.

Cool mixture 15 minutes. Preheat oven to 425F. Stir in beaten eggs. Pour into pie shell.
