Today we made Soft Chocolate Chip Ice Cream!
2C non-dairy whipped topping, 14 oz sweetened condensed milk, 1C heavy cream, whipped with 2T sugar and 1T vanilla extract; 12 oz chocolate chips
In bowl, fold together all ingredients. Blend well.
Freeze overnight. Note: Chocolate chips will mostly sink to the bottom. If this is undesired, use mini-chips.
Today we made Strawberry Marshmallow Coconut Ice Cream!
1 pint strawberries, chopped into 1/2″ pieces; 2C mini marshmallows, 1C half and half, 1/2C sugar, 1/2C skim milk, 1C shredded coconut
Melt marshmallows with half and half and skim milk over low heat, stirring constantly until smooth. Remove from heat.
Stir in sugar.
Pour over strawberries and coconut in a large bowl. Blend well.
Freeze until of desired consistency, or if a more creamy texture is desired: churn in ice cream maker. Serving suggestion: Top with chocolate syrup.
Today we made Peach Ice Cream!
1C sugar, 2 egg yolks, 1/2C lowfat milk, 1C heavy cream, 1 large fresh peach, 1t vanilla extract, 1 pinch salt
Please note: This recipe makes 1 pint. Double the amounts for 1 quart.
Heat yolks, sugar, milk and salt, stirring constantly until mixture is 200F. Do NOT boil.
Remove from heat and chill 2 or more hours. Puree peach in blender.
Stir in vanilla and cream.
Add to batter. Churn in ice cream maker.
Freeze two or more hours.
Today we made Cherry Vodka Chip Ice Cream!
3 egg yolks, 1C lowfat milk, 16 oz heavy cream, 1/2C sugar, 2C halved fresh cherries, 1t vanilla extract, 1/4t salt, 1C chocolate chips, 1 1/2C vodka
Place cherries in shallow dish. Soak in vodka, covered, at least 2 hours.
In saucepan, beat milk with yolks, salt and sugar over medium heat until just starting to boil, stirring constantly.
Chill at least 3 hours. Stir in cream, vanilla and well-drained cherries.
Churn in ice cream maker. Fold in chocolate chips. Freeze at least 2 hours.
Today I made Banana Chocolate Chip Ice Cream!
3 large bananas, 1C sugar, 1t lime juice, 1t vanilla extract, 2C heavy cream, 8 oz chocolate chips or mini chocolate chips or a combination thereof
Whip all ingredients except for chocolate chips, in blender.
Pour into ice cream maker. Churn according to manufacturer’s directions. Add chocolate chips.
Freeze 2 or more hours.
Today I made Blueberry Cheese Ice Cream!
2 pints fresh blueberries, 1/4C water, 16 oz fat-free cream cheese, 2C sugar, 16 oz heavy cream
Rinse blueberries. Heat in saucepan with water until water has boiled for three minutes. Remove from heat. Push blueberries through a sieve.
Retain puree. Use blueberry pulp and skins in another recipe, if desired.
In bowl, cream sugar with cream cheese.
Stir in heavy cream. Blend well.
Stir in blueberry puree.
Churn in ice cream maker.
