Today we made Apple Honey Nut Cake!
14 oz sweetened condensed milk, 2 scant C flour, 3t baking powder, 1/2 C apple juice, 1/2C coarsely chopped peanuts, 1/2C coarsely chopped almonds lightly salted with sea salt, 1/2C honey
Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix juice and honey.
Stir in milk. Blend well.
Stir into dry ingredients until just blended.
Stir in nuts.
Turn into greased loaf pan.
Bake 40-45 minutes or until knife inserted in center of cake emerges clean.
Today we made Apple Honey Muffins!
2C flour, 2t baking powder, 3T sugar, 1 egg, 1/2C apple juice, 1/2C honey, 1/4C butter, melted; 2 medium Granny Smith apples, peeled and chopped into 1/2″ to 1/4″ pieces
Preheat oven to 350F. Sift together dry ingredients. In separate bowl, mix wet ingredients, including apples. Blend well.
Make a well in the dry. Add the wet.
Stir until just blended. Turn into lined, nonstick or greased muffin tin.
Bake 15-20 minutes or until lightly browned.
Today we made Lemon Honey Sorbet!
1/4C honey, 1/2C water, 2/3C lemon juice, 1/4C sugar
Stir honey, sugar and water over medium heat until sugar is dissolved.
Remove from heat. Add lemon juice. Blend well.
Cool. Freeze until of desired consistency.
Today we made Honey Chocolate Chip Cookies!
1/2C honey, 1/2C butter, 1 egg, 1/2t vanilla, 1C flour, 1/2C rolled oats, 1/2t baking soda, 2T brown sugar, 2/3C chocolate chips, 2/3C salted peanuts
Preheat oven to 325F. Beat honey and butter until creamy but not fluffy.
Beat in egg and vanilla.
In separate bowl, mix dry ingredients. Stir into wet.
Blend well. Add chips and nuts.
Chill one half hour. Drop by Tbs onto greased cookie sheet.
Bake 10-12 minutes or until lightly browned.
Today we made Honey Gelato!
4T cornstarch, 3 1/2C whole milk, 3/4C honey
Bring cornstarch, 3C milk and honey to boil.
When bubbling, add remaining milk and cook until the consistency of pudding.
Run through sieve.
Freeze. Serve with chocolate syrup.
Today we made Chocolate Chocolate Chip Honey Cake!
1/2C butter, 1/4C cocoa, 1/4C sugar, 1/4C honey, 1/3C skim milk, 1 egg, 12 oz chocolate chips, 1C flour, 1/2t baking powder, 1/4t baking soda
Preheat oven to 325F. Cream buttter and sugar.
In separate bowl, sift together dry ingredients. Add wet.
Stir in milk.
Stir in honey. Blend well.
Fold in chocolate chips.
Turn into 13″X9″ greased cake pan (for a higher cake, use an 8″X8″ pan and extend baking time by 5-7 minutes).
Bake 25-30 minutes or until cake comes away from sides of pan and toothpick inserted in center of cake comes out very nearly clean.
Today we made Date Honey Brownies!
1C chocolate chips, 6T butter, 2 eggs, 1/3C honey, 1t vanilla extract, 1/2C flour, 1/2t baking powder, dash salt, 1C chopped dried dates
Preheat oven to 350F.
Melt chocolate chips and butter. Stir until smooth. In bowl, stir together eggs, honey and vanilla.
Add to cooled chocolate mixture.
Sift in flour and baking powder.
Stir in salt. Fold in dates.
Turn into greased 8″ square pan.
Bake 25-30 minutes or until edges come away from sides of pan. Cool before cutting with serrated knife.
