Today we made Mango Frozen Yogurt!

1 medium mango, pureed, 16 oz nonfat plain yogurt, 1/2C sugar

Make yogurt cheese: Put yogurt in fine-mesh sieve over bowl covered with plastic wrap. Chill overnight. Stir together yogurt and puree with rubber spatula.

Stir in sugar.

Blend well with whisk.

Freeze until of desired consistency.

Today we made Mango Custard Pie!

2 eggs, 1C skim milk, 14 oz sweetened condensed milk, 2 medium mangoes, 2 graham cracker pie shells

Preheat oven to 350F.

Add eggs. Blend well.

Peel and dice mangoes into 1/4″ pieces.

Today I made Mango Cupcakes!

scant 1 1/2C flour, 1 3/4t baking soda, 1t salt, 1/2C butter, 3/4C sugar, 2 eggs, 1t vanilla, 1/4C skim milk, 1/2C mango puree

Preheat oven to 350F.

Sift dry ingredients. In separate bowl, cream butter with sugar.

Add eggs. Blend well.

Stir in vanilla.

Add dry ingredients alternately with milk and mango puree beginning and ending with dry, until just blended.

Turn into lined, nonstick or greased cupcake tin.

Bake 17-20 minutes or until toothpick inserted into center of center cupcake comes out clean. Frost if desired.

Today I made Mango Souffle!

3 eggs, separated, 2 mangoes, 2T orange juice, 1/2C sugar, 2T cornstarch, 1/2t salt, 3/4C milk, 2T butter

Beat egg whites until soft peaks form.

Gradually beat in 1/4C of the sugar until stiff peaks form.

Puree the mangoes.

Mix with orange juice.

Heat wih cornstarch, salt, 1/4C of the sugar, and milk until thickened, about 10-15 minutes.

Preheat oven to 350F.

Stir in butter.

In separate bowl, beat yolks. Temper mango mixture with yolks. Fold in egg whites.

Bake in a greased souffle dish that is sitting in a larger vessel with hot water, 50-60 minutes or until firm.

Mango Lime Rum Ice Milk

Today I made Mango Lime Rum Ice Milk!

14 oz fat free sweetened condensed milk, 1 1/4C skim milk, 1/2 of a large mango, 1/2C lime juice, 1 1/4C citrus rum

Chop the half mango in half. Chop one of the halves into 1/4″ pieces. Chop the other half into 1/2″ pieces. Soak in rum at least 2 hours.

In bowl, mix milks. Blend well.

Drain mango. Use rum for another recipe.

Today I made Mango Custard Pie!

1 large or 2 small mangoes, peeled and chopped into 1/2″ chunks, 1 graham cracker pie shell, 1 1/2C skim milk, 1/4C cornstarch for thick custard (or 3T cornstarch for somewhat thinner custard), 1/2C sugar, 2 eggs, slightly beaten

Preheat oven to 350F.

Stir together cornstarch and sugar in saucepan.

Mix in milk.

Stir constantly over medium heat until thick, and running a finger over the back of the mixing spoon leaves a permanent streak.

Reduce heat to low. Stir in eggs.

Cook 5 more minutes, stirring vigorously. Remove from heat. Arrange mango chunks in bottom of pie shell.

Spoon custard over chunks.

Cool 20 minutes. Chill 1 or more hours.

Today I made Mango Cheesecake!

8oz cream cheese, 1/2C sugar, 14oz fat-free sweetened condensed milk, 1 egg, 2 fresh mangoes, thinly sliced into sticks, 1T orange juice, 1 1/2C cake crumbs

Preheat oven to 350F. Spread cake crumbs evenly in bottom of greased 9″ round pan. In bowl, mix together cream cheese and sugar.

Arrange mango slices on batter.
