Today we made Multi-Flavor Candy Bars!
Crust: 2/3C brown sugar, 1C butter, 2 1/2C flour
Filling: 14 oz sweetened condensed milk, 1C creamy peanut butter, 2C chocolate chips, 1 egg, 3C mini marshmallows
Preheat oven to 325. Blend together crust ingredients.
Press into large greased casserole dish.
Bake 20 minutes or until light golden on the edges. Increase oven temperature to 350F. Mix sweetened condensed milk, peanut butter and egg. Blend well.
Spread evenly onto crust.
Sprinkle on chocolate chips.
Sprinkle on mini marshmallows.
Bake 10 minutes. Cool.
Chill before cutting.
Today we made Frozen Coconut Marshmallow Fudge Pie!
1C chocolate chips, 14 oz sweetened condensed milk, 2C mini marshmallows, 2C sweetened shredded coconut, 1/4C skim milk, 1 graham cracker pie shell
Melt chocolate with sweetened, condensed milk over low heat. Stir until smooth. Remove from heat.
Stir in skim milk.
Add coconut and marshmallows. Blend well.
Turn into pie shell.
Today we made Strawberry Marshmallow Coconut Ice Cream!
1 pint strawberries, chopped into 1/2″ pieces; 2C mini marshmallows, 1C half and half, 1/2C sugar, 1/2C skim milk, 1C shredded coconut
Melt marshmallows with half and half and skim milk over low heat, stirring constantly until smooth. Remove from heat.
Stir in sugar.
Pour over strawberries and coconut in a large bowl. Blend well.
Freeze until of desired consistency, or if a more creamy texture is desired: churn in ice cream maker. Serving suggestion: Top with chocolate syrup.
1C flour, 1C oats, 1C brown sugar, 1t baking soda, 1/2C butter
Filling: 2 eggs, 1C brown sugar, 1/2t vanilla, 2T flour, 1t baking powder, 1C mini marshmallows, 3 oz slivered almonds, 1C chocolate chips
Preheat oven to 325F. Cut butter into dry ingredients until crumbly.
Press into 13X9″ ungreased dish or pan. Bake 10 minutes.
For filling, beat eggs, brown sugar and vanilla.
In separate bowl, mix together dry ingredients. Add to wet. Blend well.
Pour over hot crust.
Sprinkle chips, marshmallows and almonds evenly on top. Press down lightly.
Bake 35-40 minutes or until lightly browned.
Today we made Chocolate Marshmallow Cake!
10T butter, 10T white sugar, 3 eggs, 1C powdered sugar, 1 1/8C flour, 1/3C cocoa, 6 oz marshmallows
Preheat oven to 325F. Cream buttter and white sugar.
Sift together dry ingredients. Add to wet.
Turn half of batter into greased 9″ round cake pan.
Place marshmallows on top.
Spread remaining batter evenly on top of marshmallows.
Bake 45-50 minutes or until cake starts to pull away from sides of pan. Cool before cutting.
Today we made Peanut Butter Marshmallow Pudding!
scant 1/4C cornstarch, 1/3C creamy peanut butter, 1/4C sugar, 1C skim milk, 1 heaping C mini marshmallows
Stir together cornstarch, milk and sugar.
Cook on medium heat, stirring constantly until thickened, 5-7 minutes. Stir in marshmallows to melt. Blend well.
Stir in peanut butter.
Serve warm topped with chocolate syrup.
2C skim milk, 12 oz chocolate chips, 5 oz mini marshmallows, 14 oz sweetened condensed milk, 8 oz fat-free cream cheese, 6 oz slivered almonds (optional)
Stir milks constantly on medium heat until condensation evaporates from bottom of saucepan.
Add cream cheese. Blend well.
Add chocolate chips. Stir until melted.
Turn off heat. Add marshmallows. Stir until nearly all melted.
Stir in almonds (optional).
Pour into serving dish. Freeze until of desired consistency.
Today I made Cranberry Marshmallow Ice Milk!
14 oz sweetened condensed milk, 2C skim milk, 10 oz fresh cranberries, 10 oz mini marshmallows, 1/3C Grand Marnier
Steam cranberries over boiling water until tender, about 5 minutes.
Sprinkle over marshmallows in glass casserole dish; some marshmallows will melt.
Pour Grand Marnier over mixture. Cover with plastic wrap and let soak 2 or more hours.
Transfer to a bowl. Add condensed milk.
Stir in skim milk. Blend well.
Today I made Coffee Marshmallow Ice Milk!
3/4C brewed coffee, cooled, 1 1/2C skim milk, 4C mini-marshmallows, 2C brown sugar
Put marshmallows over medium heat until almost melted. Turn off heat.
Stir in brown sugar, then coffee. Blend well.
Stir in milk. Blend well.
Pour into souffle dish or other receptacle.
Today I made Chocolate Marshmallow Ice Milk!
1/3C sugar, 1/2C cocoa, 2C milk, 10 oz mini marshmallows
Heat sugar, cocoa and milk. Blend well. When very hot but not boiling, add marshmallows. Stir until melted and smooth. Remove from heat. Pour into greased souffle dish. Cool. Freeze at least 2 hours.
